It’s a “Date” Granola Recipe

Ingredients
  

  • 1 cup quick cook oats
  • 4 medjool dates pitted and chopped
  • 1/4 cups raw honey or other binding liquid like maple syrup
  • 1/2 cup hazelnuts chopped
  • Pinch of salt
  • 1/2 teaspoon vanilla extract

Instructions
 

  • Preheat your oven to 450F. Line a cookie sheet with parchment paper.
  • In a large bowl mix together all of the ingredients. You may need to add a little more honey (or other binding liquid) if you have a lot of loose oatmeal. The ingredients should not come together in a single clump but they should stick together in smaller bunches.
  • Spread out the granola onto the cookie sheet, as flat as possible. Place in the oven.
  • After 5-8 minutes use a fork or spoon to mix up the granola. Do this again 5 minutes later.
  • When the oats and nuts turn a golden brown color, remove from the oven and mix again. Wait several minutes. It should turn crunchy as it cools down. If it does not, place back into the oven for a few more minutes.
  • Note: Do not wait for the color to be dark brown, at this point it’s cooked too far and may taste burnt.
