1 tablespoon olive oil 1 medium yellow onion diced 1 medium green bell pepper diced 2 cloves garlic minced 1 cup brown lentils rinsed and drained 2 cups vegetable broth 1 15-ounces can tomato sauce 2 tablespoons tomato paste 1 tablespoon soy sauce 1 tablespoon maple syrup 2 teaspoons chili powder 1 teaspoon smoked paprika 1 teaspoon ground cumin 1/2 teaspoon salt 1/4 teaspoon black pepper 4 whole wheat hamburger buns toasted
In a large skillet, heat olive oil over medium heat. Add diced onions and bell peppers, cooking until softened, about 5 minutes.
Stir in minced garlic, chili powder, smoked paprika, and cumin, cooking for another minute until fragrant.
Add rinsed lentils, vegetable broth, tomato sauce, tomato paste, soy sauce, maple syrup, salt, and pepper to the skillet. Bring to a simmer.
Reduce heat to low and let the mixture cook, uncovered, for about 20 minutes, or until lentils are tender and the sauce has thickened.
Adjust seasonings to taste, then spoon the lentil mixture onto toasted whole wheat hamburger buns and serve immediately.
