  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 2 teaspoons espresso powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup pumpkin purée
  • 1/2 teaspoon vanilla extract
  • 1/3 cup granulated sugar
  • 1/4 cup milk
  • Whipped cream
  • Caramel topping

Instructions
 

  • Spray a large mug with nonstick cooking spray.
  • Add the flour, baking powder, espresso, cinnamon, nutmeg, and salt to your mug. Using a fork, stir well to combine.
  • Add the pumpkin purée, vanilla, and sugar. Stir until well combined. Slowly add the milk and stir to incorporate all the ingredients.

  • Microwave on high for 2 minutes.
  • Remove the mug from the microwave and allow the cake to cool for 5 minutes.
