- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 2 teaspoons espresso powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/4 cup pumpkin purée
- 1/2 teaspoon vanilla extract
- 1/3 cup granulated sugar
- 1/4 cup milk
- Whipped cream
- Caramel topping
Spray a large mug with nonstick cooking spray.
Add the flour, baking powder, espresso, cinnamon, nutmeg, and salt to your mug. Using a fork, stir well to combine.
Add the pumpkin purée, vanilla, and sugar. Stir until well combined. Slowly add the milk and stir to incorporate all the ingredients.
Microwave on high for 2 minutes.
Remove the mug from the microwave and allow the cake to cool for 5 minutes.
Top with whipped cream and a generous drizzle of caramel.
