Ingredients
  

  • 1 1/4 pounds salmon fillets skin and bones removed
  • 1/2 cup breadcrumbs
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil for cooking
  • 4 burger buns optional
  • Lettuce leaves optional
  • Sliced tomatoes optional

Instructions
 

  • Cut the salmon into 1/4-inch pieces or pulse briefly in a food processor for a coarse grind.

  • In a large bowl, combine the chopped salmon, breadcrumbs, parsley, lemon juice, Dijon mustard, salt, and pepper. Mix until well combined.
