- 1 1/4 pounds salmon fillets skin and bones removed
- 1/2 cup breadcrumbs
- 2 tablespoons fresh parsley chopped
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil for cooking
- 4 burger buns optional
- Lettuce leaves optional
- Sliced tomatoes optional
Cut the salmon into 1/4-inch pieces or pulse briefly in a food processor for a coarse grind.
In a large bowl, combine the chopped salmon, breadcrumbs, parsley, lemon juice, Dijon mustard, salt, and pepper. Mix until well combined.
Form the mixture into four equal-sized patties.
Heat olive oil in a non-stick skillet over medium-high heat.
Cook the salmon patties for about 4-5 minutes on each side, or until golden brown and cooked through.
Serve the salmon burgers on burger buns with lettuce and tomato slices, or enjoy them plain with a side salad.
