Ingredients
  

  • 1 can black beans
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup coconut oil in liquid form, microwave if necessary
  • 1/2 cup honey
  • 1 teaspoon vanilla
  • 3 eggs
  • 1/2 cup flour
  • 1/4 teaspoon salt

Instructions
 

  • Preheat oven to 350. Grease a square baking pan with cooking spray.
  • Mix all ingredients in a large mixing bowl by hand. You can mash the beans slightly while stirring. Pour into prepared baking pan and bake for 30-40 minutes. Cool completely before cutting.
  • For "hidden bean" brownies: Pour beans into a mixing bowl and use a mixer to break apart the beans. Add remaining ingredients and mix until combined. Pour into prepared baking pan and bake for 30-40 minutes. Cool completely before cutting.

Notes

Notes: the "full bean" brownies look like nuts, but they are obviously not. They are a little firmer than the batter, so you get a difference in texture when you eat it. I liked it. It's not for everyone, but certainly something to try.
