Is anyone else obsessed with those little check-out stand cookbooks? I’ve been collecting them for years and have tons of them. I find some of my best recipes in those cookbooks, like these Sour Cream Apple Bars that I found in the Land O Lakes Recipe Collection from 2007. I have an apple cake recipe that I’ve been making forever (can’t believe I never shared that recipe on the blog – coming soon), and was looking for something a little different. A few days ago I came across this apple bar recipe, and had to give it a try. I slightly adapted the recipe, using pecans instead of walnuts. I hate to admit this, but I actually like these bars more than my apple cake. I love the creamy apple filling in the center and that bit of crunch from the oat crust and topping. This recipe is a keeper for sure!

Ingredients
  

Instructions
 

  • Heat oven to 350°F. Combine butter and brown sugar in bowl. Beat at medium speed until creamy. Add all remaining crust ingredients; continue beating until well mixed.
  • Press half of crust mixture onto bottom of ungreased 13x9-inch baking pan. Bake 8-10 minutes or until light golden brown.
  • Combine all filling ingredients in bowl; mix well. Pour filling over hot, partially baked crust. Crumble remaining crust mixture over filling and press down lightly.
  • Bake 30-35 minutes or until top is golden brown and center is set. Cool completely. Cut into bars. Store refrigerated.

You’ll want to store these bars in the refrigerator. I recommend serving them warm with a scoop of vanilla ice cream. Enjoy!
