Easy Bunny Cupcakes

Whether you serve these cupcakes for a school party, an Easter brunch or Easter dinner dessert.
Can I Use Box Cake Mix?
I love making cake from scratch, but I know that sometimes, you just need things done fast. You can use your favorite cake mix. It won’t affect how adorable these cupcakes look.
Can I Use Store-Bought Frosting?
Again, when you need things done fast, you can certainly use a store bought frosting. However, to make the cupcake top look like the bunny, you might need to add some extra powdered sugar to the frosting.
Can I make pink sugar?
I am using gold sugar on the cupcakes. I just love the look of the gold. If you want to use a different color, like pink or even blue and yellow, you can certainly change the color.
How to Store the Easy Bunny Cupcakes
These cupcakes can be stored on the counter. There is no need to refrigerate them. You do want to make sure to keep the cupcakes in a cupcake holder or other air tight container. I love this cupcake holder. It is perfect for cupcakes with a lot of frosting swirled on top.
It cute enough for the counter but it also works for taking the cupcakes to places like an school Easter party.
Variations to these Bunny Cupcakes
I am making vanilla cupcakes but you can also make these cupcakes in chocolate. Many people love the flavor combination of chocolate cupcakes and vanilla frosting.
Add coconut. I am not adding coconut to my frosting, but if you add some to the top of the cupcakes, on the frosting, it can look like the rabbit fur.
Add eyes. Ok, so now we are getting into a much more detailed rabbit, but if you want to take these adorable bunny cupcakes even further on the cuteness level, you can add candy googly to the cupcakes.
Ingredients
For the vanilla cupcakes
butter
sugar
eggs
vanilla extract
all-purpose flour
baking powder
milk
For the vanilla buttercream
unsalted butter
powdered sugar
milk
vanilla extract
For the Bunny Ears decoration
marshmallows
gold colored sanding sugar
How to Make Bunny Cupcakes
Preheat the oven to 325ºF. Line a cupcake tin with 12 liners.
Add the butter and sugar to a large mixing bowl and beat until pale and creamy.
Add the eggs one at a time, beating well in-between each addition. The mixture should double in volume and look very light.
Pour the vanilla extract into the mixture and mix until combined.
Mix together the flour and the baking powder, then add a third of it to the mixing bowl, beat well, then add a third of the milk beating again. Repeat until all the flour and milk have been added.
Divide the cupcake batter between the 12 cupcake cases.
Bake in the center of the oven for 16-18 minutes or until the cupcakes are light golden brown and spring back when touched.
Once baked, set aside to cool on a wire rack.
To make the vanilla buttercream add the butter to a large mixing bowl and beat until very creamy.
Add the powdered sugar and beat again. You will notice that the mixture looks like dry sand. Don’t be alarmed as it will come together when you add the milk.
Pour in the milk and vanilla extract and beat on high speed for at least 5 minutes. The vanilla buttercream should look pale and very fluffy.
Transfer the buttercream to a piping bag fitted with a piping nozzle. I used a Wilton 1M but you can use any nozzle you have on hand.
Pipe the buttercream on top of the cooled cupcakes.
To make the bunny ears, cut the marshmallows in half diagonally.
Dip the cut side into the sanding sugar.
To assemble, press two marshmallow bunny ears on top of the icing on each of the cupcakes.
