Make a tender, juicy chuck roast in half the time with an air fryer!

I remember growing up and drooling as the oven slowly roasted a tender, juicy cut of beef. Fast-forward years, and I still enjoy that mouth-watering aroma. However, with this air-fried chuck roast recipe, I can get it on the table in half the time. The house smells just as good, but my taste buds are happier sooner.

With each new kitchen gadget I get, I think, “Wow, it can’t get any easier than this.” Yet, somehow, it always does. The air fryer is a fantastic tool, and I’m still kicking myself for keeping it boxed up for a year before venturing into the unknown. I have the kind that doubles as an oven and toaster, so it has virtually replaced my oven for everything.

Part of the joy of having an air fryer is that you don’t have to wait until the weekend to make certain meals that used to take hours. Any time I can get dinner on the table in less than an hour, without a lot of preparation, is a good thing. It’s time to say goodbye to the concept of the “Sunday Roast” because we can now enjoy this delectable dish any day of the week.

How To Make An All-In-One Meal With Your Chuck Roast

Adding vegetables to your roast can make a complete meal. Potatoes and carrots are the most often used vegetables, and they absorb the aroma from the roast as they cook alongside. Every air fryer is different, so you will need to check your vegetables after they have cooked for about 30 minutes.

To add veggies to your roast, complete steps 1 to 6. When the beef finishes the initial 15 minutes of cooking time, reduce the temperature as shown and place the veggies around the meat. I recommend mixing the vegetables with olive oil and seasoning before putting them in the air fryer. Remove the veggies once they are fork-tender. Hopefully, they will finish cooking at the same time as the roast, but it could take a shorter or longer period to cook, depending on your air fryer and the degree to which you like your roast.

How To Make Ahead And Store

Cooked beef lasts up to 3 days when refrigerated in an airtight container. You can also freeze the beef tightly wrapped in plastic and put it in a freezer-safe bag for up to 2 months. The leftover roast can be used in many other recipes and enjoyed in countless ways.

Serving Suggestions

Carrots and potatoes are natural accompaniments for a chuck roast; if you opt to cook them separately rather than with the meat, some recipes I recommend include Roasted Honey-Glazed Carrots, Roasted Asparagus and Carrots, Roasted Asparagus and Potatoes, and Twice-Baked Potatoes.

Add a side salad with Greek Salad Dressing, some Cornbread with Creamed Corn, and a plate of Oatmeal Chocolate Chip Cookies for dessert for a complete, hearty, and utterly delicious meal.

Ingredients
  

  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Instructions
 

  • Preheat the air fryer to 390 degrees F.
  • Rub the chuck roast with olive oil.

  • Combine salt, pepper, garlic powder, onion powder, thyme, and rosemary in a small bowl.

  • Rub the seasoning mix all over the chuck roast.

  • Place the seasoned roast in the air fryer basket.

  • Cook at 390 degrees F for 15 minutes.
  • Reduce the temperature to 320 degrees F and cook for another 45 to 60 minutes, or until the roast reaches your desired level of doneness.
  • Remove the roast from the air fryer and let it rest for 10 minutes before slicing.
