Making the switch a couple of years ago to working for myself from home, not only gave me more flexibility in my schedule but an opportunity to be more involved with my kids and grandchildren. I love being able to do things like pick my granddaughters up from school, and taking the dogs for an afternoon stroll. Being home during most meal times has helped me to eat a healthier diet. Gone is the temptation of the break room vending machine. There are still some days when we have a lot of running around to do, and it takes a little more effort to plan some healthy snacks.

I have always been a big fan of cheese and find that when I reach for a snack that includes cheese and maybe some fruit, I feel satisfied and fueled for the rest of the afternoon. Whether it’s a cheese and deli meat roll-up or an apple and Swiss quesadilla, the addition of cheese takes care of my cravings without any guilt.
While it’s important to fuel your body with healthy foods, a fulfilling and happy life is filled with many ‘life ingredients’. My essential life ingredients include family, friends, laughter, chocolate, and a little adventure.
The secret to my ideal happy life includes time with family, laughter and chocolate. Sorry, but I simply couldn’t leave off the chocolate. It’s my guilty little pleasure. A few other things that I would include in my personal RDA are an hour of quiet time each day, a good book, and crafting.

I love making quesadillas for both lunch and snack breaks. They are so simple to put together and the ingredient possibilities are endless. I made this Apple and Swiss Quesadilla one afternoon when I just wasn’t going to make it until dinnertime. I was desperate for something that would satisfy my hunger and help me finish up all the work I had left to do that day.
Ingredients
- 5 – 6 slices Alpine Lace® Swiss reduced fat deli cheese
- 1 apple, cored and sliced thin
- 1/4 cup shredded lettuce or spinach leaves
- 2 spinach tortillas
- vegetable spray
Instructions
Step 1: To make, layer the 4 slices of Swiss cheese on top of a tortilla. Add a layer of apple slices.
Step 2: Top with some sliced lettuce or fresh spinach leaves.
Step 3: I used bib lettuce, since that’s what I had, but any lettuce would be fine.
Step 4: I just like having that bit of something green.
Step 5: Top with remaining 2 slices of cheese. Cover with the second tortilla, and place in a pan, on medium heat, that has been sprayed with vegetable spray.
Step 6: Cook for several minutes, until the tortilla begins to brown, flip and cook another 2 to 3 minutes.

Apple and Swiss Quesadilla Recipe

What a unique idea! You always think of quesadills as being more savory, but these sound delicious with a little sweet in them too.
