The fresh strawberries in the batter make these donuts extra moist, and so pretty. And, the buttermilk makes them so tender. I’ve made a lot of baked donuts in recent years, and have to say this is my favorite donut recipe to date.

Last weekend Tati and I visited the Florida Strawberry Festival. I hadn’t been since I was a kid, and boy, has it ever grown over the years. Like any 8 year old, Tati was all about the rides. But, I was there for one thing – the strawberry shortcake. Strawberries are so plentiful and sweet this time of the year in Florida. I just couldn’t resist picking some up from the local farm stand and trying out some new recipes.

Although my phone was taking terrible pictures at the festival, you can still see the awesomeness of our strawberry shortcakes.

To make these donuts festival worthy, I sprinkled on some Fruity Pebbles while the strawberry glaze was still wet. Fruity Pebbles seem to be all the rage at gourmet donut shops these days. So, here I am jumping on the bandwagon. Besides, Fruity Pebbles have a way of making things a little better. Don’t you think?

Baked is better.

You heard that right. I’ve been reformed.

I used to be a total snob about deep fried donuts. Until I learned a better way. Baked donuts are incredibly simple to make thanks to a handy dandy donut pan. You will not miss the grease. I promise. You can pick up a donut pan from Amazon or your local kitchen supply store. I’ve even seen them at Michael’s craft store.

Before you dip them into the glaze and sprinkle on the Fruity Pebbles, let them cool out of the pan.

Once the donuts have cooled, dip them into the glaze a couple of times and return to the wire rack to set, but before they do be sure to sprinkle on some Fruity Pebbles.

These donuts are best when eaten the same day, but are fine a day in advance. They won’t take you long at all to make in the morning. Trust me. They are so worth it!

Ingredients:

Yields: 12 donuts

  • 2 cups flour
  • 1/2 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons butter, melted
  • 2 large eggs
  • 3/4 cup buttermilk
  • 1 tablespoon vanilla
  • 2 tablespoons strawberry jam
  • 1 cup fresh strawberries, diced very small
  • Glaze:
  • 1 cup fresh strawberries, diced very small
  • 2 cups powdered sugar

Instructions:

Step 1: Preheat oven to 425 degrees. Lightly grease donut pans with non stick cooking spray.

Step 2: Prepare the glaze. Combine 1 cup small diced strawberries with 2 tablespoons sugar. Stir and mash with fork, letting sit at room temperature until strawberry juice is produced. Then add 2-3 tablespoons of this strawberry juice mixture to confectioners sugar and mix well. If glaze seems to runny or to thick, add more strawberry juice or confectioners sugar until desired consistency. Set aside.

Step 3: Prepare the donut batter. In a large bowl combine flour, sugar, baking powder, and salt. Stir to combine.

Step 4: In another bowl combine the melted butter, eggs, buttermilk, vanilla, and strawberry jam.

Step 5: Add the wet ingredients to the dry ingredients. Mix just until combined, then fold in the diced strawberries. Carefully spoon mixture evenly into doughnut pans, filling about 3/4 full. You should have enough batter for 12 donuts.

Step 6: Bake for 8 to 10 minutes or until toothpick inserted comes out clean.

Step 7: Cool on a wire rack. Once cooled, dip each donut into glaze and return to wire rack. Sprinkle generously with Fruity Pebbles cereal.
