Blueberry Cupcakes with Goat Cheese Frosting…sound interesting?

These unique cupcakes are sure to win over both your adult friends and children alike. The tangy, sweet goat cheese frosting is the perfect compliment to this light blueberry cupcake. It’s a great addition to your Fourth of July picnic or anytime you want to indulge. I just can’t get enough of these delightful cupcakes!

Ingredients:

Cupcakes:

1 1/2 cups all-purpose flour
1 3/4 teaspoon baking powder
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
3/4 cup granulated sugar
2 eggs
2 teaspoons vanilla
1/2 cup milk
1 cup blueberries, plus additional for garnish

Goat Cheese Frosting

  • 4 ounces goat cheese
  • 1/4 cup (1/2 stick) unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tablespoon milk

Instructions:

Step 1: Preheat oven to 350 degrees. Line 12 standard muffin tins with paper baking cups. Whisk flour, baking powder and salt in small bowl.

Step 2: Beat 1/2 cup butter and granulated sugar in large bowl with electric mixer at medium speed until light and fluffy. Add eggs and vanilla; beat well. Add flour mixture and 1/2 cup milk; beat at low speed just until combined. Stir in 1 cup blueberries. Spoon batter evenly into prepared muffin cups.

Step 3: Bake 20 minutes or until toothpick inserted into centers comes out clean. cool in pan 10 minutes. Remove to wire rack and allow to cool completely.

Step 4: For frosting, beat goat cheese and 1/4 cup butter in large bowl with electric mixer at medium speed until well combined. Add powdered sugar and tablespoon of milk; beat until smooth. If frosting is too thick, add an additional tablespoon of milk. Frost cupcakes; garnish with additional fresh blueberries.

Step 5: Enjoy!

    How French – berries and goat cheese. I love goat cheese – actually, I love ALL cheese!! The only differnce I’d make to this (and will, because this is going into my marketing list tomorrow along with a few other recipes I found here today), is that I’ll try and use blackberries, instead, I am addicted to them!

    these are my absolute favorite to bake for adult birthdays or special occasions. Due to the bad rap goat cheese gets I never tell anyone about the frosting until they have tasted it and commented that its delicious. Then their reaction is always “no way I don’t even like goat cheese” Super easy and quick to make and put together. Easy to double as well
