The sauce became famous in the 1960s, being created in — you guess it — Buffalo, New York, as a spicy and tangy alternative to traditional barbecue sauce. Versions of it are now used for chicken wings, sandwiches, and dips.

Is This Buffalo Stuffed Chicken Hot?

This recipe is supposed to be a spicy chicken dish, just like buffalo chicken dip is supposed to be spicy. If you want to make this buffalo-stuffed chicken you can use less buffalo sauce. The recipe calls for 1/2 cup of buffalo sauce, so you can use 1/4 cup instead. You can also add ranch dressing over the top of the chicken. This will help tame the spiciness of the chicken.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • ½ tsp salt, pepper and garlic powder
  • 4 oz cream cheese, softened (full fat, block style)*
  • ½ cup shredded cheddar cheese
  • ½ cup crumbled bacon
  • 2 tbsp mayonnaise
  • ½ cup buffalo sauce, divided
  • 1 tbsp dry ranch seasoning mix
  • ¼ cup ranch dressing
  • 2 tbsp green onion, chopped (optional)

Instructions

  • Preheat oven to 375 degrees F.
  • Slice (butterfly) 4 chicken breasts horizontally about ¾ of the way through each breast. Do not fully slice breasts in half. The chicken will resemble a pita pocket that will hold the cheese mixture.  Set chicken breasts on a plate and set aside for now.
  • Spray a 9” x 13” baking dish with non-stick cooking spray.
  • In a medium bowl, stir together olive oil, salt, black pepper and garlic powder.
  • Place chicken breasts in olive oil mixture (one at a time) to fully coat both sides of every chicken breast. Place the oiled chicken in the baking dish.
  • In a medium bowl, beat together cream cheese, shredded cheddar, crumbled bacon, ¼ cup of the buffalo sauce, mayonnaise and dry ranch seasoning until fully combined.
  • Gently spoon mixture into the middle of each chicken breast. Distribute filling evenly in each of the 4 chicken breasts.

  • Bake in oven for 40 – 45 minutes or until chicken is thoroughly cooked. Use a meat thermometer to make sure chicken internal temperature has reached 165 degrees F.

  • With 5 minutes left of baking time, remove baking dish from oven and top chicken breasts with the remaining ¼ cup of buffalo sauce. Return baking dish to oven for the remaining 5 minutes.
  • Remove baked chicken from oven and serve hot. Drizzle Ranch dressing over chicken and sprinkle with green onions (optional).

What To Serve With Buffalo Stuffed Chicken Breast

While you could consider these buffalo stuffed chicken breasts to be a meal by themselves, for a healthy, round meal, why not pair them with these suggestions? In the photos, I’ve married the chicken with a traditional garden salad but a Caesar salad or coleslaw would also work well. Roasted or grilled vegetables such as broccoli, carrots, asparagus, and zucchini, or corn on the cob would be a nice vegetable pairing. Baked or sweet potatoes, quinoa, rice, or garlic bread would also work with the chicken.

Can I microwave the chicken to reheat it?

You do not want to use the microwave to reheat the chicken because it can cause it to become dry and rubbery.

I undercooked the chicken despite using a thermometer. How come?

Check the middle of the thickest part of the breast (not into the cream cheese filling) for an accurate temperature reading.

How To Store Buffalo Chicken

You can store the leftovers in the refrigerator for up to 3 days or you can freeze them. Be sure to let the chicken cool before storing the chicken in the refrigerator or the freezer. If you choose to freeze the leftovers, you will want to  store them in an airtight container or in a freezer bag. The stuffed chicken breast will last for up to 2 months in the freezer. When you are ready to serve, thaw the chicken in the refrigerator overnight.

For the best results, you want to reheat the buffalo stuffed chicken breast in the oven. Place the chicken in an oven-safe dish and cover it with foil, loosely. Reheat at 350 degrees for about 15 minutes.

    Loved this!!! I’m a terrible cook and I didn’t even mess it up! I left out the bacon because I don’t love cooking bacon and left out the mayo because I didn’t have it on hand, still amazing!! Served with roasted sweet potatoes and asparagus, which made it really easy because it all went in the oven, made the chicken first threw it in the oven, prepared potatoes threw those in the oven, prepared the asparagus threw that in the oven, and they were all ready around the same time. Sooo perfect thank you!!!
