It is so simple to prepare and wonderfully delicious. I could eat easily Caprese Pizza every day and never get sick of it. YUM.

One thing I noticed, while in Italy two summers ago, is how most meals are prepared simply with few and only the freshest of ingredients. My Caprese Flatbread Pizza was inspired by that trip.

For this recipe I used naan bread from the bakery, but any ready-made flatbread will do.

You’ll use a fair amount of EVOO when making this Caprese Flatbread, so it’s important to use a really good one. I like HemisFares Extra Virgin Olive Oil. It’s a true taste of Italy with unfiltered oil that comes from Belice Valley Family Farms in Italy. This olive oil has up-front fruity notes that complement a finish of artichoke, almond and pepper. I’d be happy eating a flatbread with nothing but this olive oil. It’s so delicious.

Before assembling the flatbread, you will need to roast the tomatoes. I used grape tomatoes and tossed in a few small heirloom tomatoes that I had in the crisper drawer. I love that bit of additional color. Grape or cherry tomatoes that have been halved work perfectly. Toss with 2 cloves of minced garlic and a couple tablespoons of HemisFares Extra Virgin Olive Oil. Place on a baking sheet and roast for 20 minutes on 400º.

Once your tomatoes are ready, it takes little time to assemble the flatbread and bake. A drizzle of balsamic reduction and HemisFares Extra Virgin Olive Oil finish it all off. I hardly ever make frozen pizza or order pizza delivery. It’s just so easy to make your own pizza, and it is something that the whole family can do together. My 9-year old loves putting the toppings on and making her own personal flatbread. Caprese Flatbread is something my whole family can agree on. I think yours will really enjoy it too.

Ingredients
  

Roasted Tomatoes:

  • 1 pint of grape tomatoes
  • 2 tablespoon olive oil
  • 2 cloves garlic minced
  • Salt to taste

Pizza Ingredients:

  • 2 pieces of naan bread
  • 2 tablespoon HemisFares Extra Virgin Olive Oil
  • 8 ounces fresh mozzarella cheese sliced
  • Balsamic reduction
  • 3 tablespoon basil roughly chopped

Instructions
 

  • Preheat oven to 400º. Place grape tomatoes on a baking sheet and top with olive oil, garlic and salt. Toss to coat.
  • Place in oven and roast for 20 minutes. Set aside.
  • Reduce oven temperature to 350º.
  • Place flatbreads on a baking sheet. Brush the top of each flatbread with olive oil.
  • Top each flatbread with 4 oz. of freshly sliced mozzarella.
  • Evenly distribute the roasted tomatoes on top of each flatbread.
  • Place flatbreads in oven and bake for 10 minutes or until cheese is melted.
  • Top each flatbread with a drizzle of balsamic reduction, olive oil, and fresh chopped basil.

    This really looks super good to me. I like a simple pizza. I like the idea of balsamic vinegar on this and it sounds delicious. I am going to wait for garden tomatoes though right now supermarket tomatoes here taste like cardboard!
