On my recent trip to Seattle, my friend Connie brought me to the sweetest, most picture perfect little town called Issaquah.

I love traveling with a friend who has lived in and really knows an area. Connie helped me to experience some great things that are outside the typical tourist traps. There was a beautiful tree lined street that we drove down on which all of the trees have edible fruits. Issaquah has a very quaint and old fashioned appeal. I had to snap a pic of this old train depot.

During our afternoon in Issaquah, Connie’s old stomping grounds, we happened across the cutest cupcake shop ever called Confetti Cupcakes. The owner of the store was delightful. My friend and I spent quite a lot of time in the shop chatting with the owner, admiring the décor, and of course eating cupcakes. This cupcake shop was really a happening place. While we were there countless happy people walked out of the store with boxes of cupcakes.

Connie and I were both drawn to the vanilla cupcakes with strawberry frosting. They were scrumptious! The owner of the shop has really found her true calling in life, and I am so glad I happened upon her little store.

After being home for a few weeks, I found myself craving more of that delicious fresh strawberry frosting and managed to convince my Mom to come up with a recipe for it.

So the last couple of days we have been snacking on Chocolate Cupcakes with Fresh Strawberry Frosting, and they are AMAZING! The frosting isn’t quite the same as what I had at Confetti Cupcakes, but it is just as good. This frosting would be fabulous on any flavor cupcake. For this batch Mom used our favorite Hershey’s Chocolate Cake recipe. When my son was little, this is the cake he wanted every year for his birthday, but with cream cheese frosting. Yum!

Ingredients
  

For the Cupcakes:

  • 2 dozen prepared chocolate cupcakes

For the Frosting:

  • 1 cup strawberries puree with 2 tablespoons sugar about 1 pint strawberries
  • 1 cup butter softened
  • 4 cups confectioner's sugar plus more as needed
  • 1 teaspoon vanilla extract

Instructions
 

  • In a blender, prepare the puree. Place about 1 pint fresh strawberries and 2 tablespoons sugar in a blender. Pulse until almost smooth.
  • In a mixing bowl, cream butter until light and fluffy.
  • Beat in 1 cup confectioners' sugar until just blended. Add 2 tablespoons strawberry puree and the vanilla extract and mix until combined. Continue to add about 2 tablespoons strawberry puree alternating with about 1 cup of confectioners' sugar, until all ingredients have been added and are well combined and creamy. You may need slightly more than 4 cups of confectioner sugar to achieve the right consistency.
  • Using a pastry bag fitted with a tip, pipe frosting onto the cooled cupcakes.

    I love cupcakes, but I don’t think I’ve had a strawberry one! It’s definitely time to try one. Those look yummy!
