This easy-to-make and delicious Cilantro Lime Rice recipe is incredibly flavorful, and pairs perfectly with your favorite Mexican foods or as a filler for burritos. It’s one of those simple sides that you’ll find yourself making over and over again.

A flavorful side that pairs well with a variety of foods from grilled steaks to fish tacos and salmon. I especially like to serve this with my fiesta chicken, chicken and black bean enchiladas or chicken enchiladas with white sauce. YUM.

Just this past weekend I made this rice to go with some salsa verde beef enchiladas. I swear. I could eat that combo every day for a week and not tire of it. It was that good.

You can easily make a similar version of this recipe, substituting orzo for the rice. Much like this Lemon Orzo with Chives recipe. Another favorite of mine.

Ingredients:

  • 4 cups chicken stock or water
  • 1/2 teaspoon salt
  • 2 cups long grain white rice
  • 1 cup fresh, chopped cilantro (about 1 tablespoon reserved)
  • 1/3 cup fresh lime juice (about 2-3 limes)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced

Instructions:

Step 1: Add chicken stock or water and salt to a large pot with a lid. Set to medium heat, and bring to a rolling boil. Stir in rice, cover the stockpot and reduce heat to medium-low. Allow the rice to absorb the broth and become tender, about 20 minutes.

Step 2: Meanwhile, in a large bowl stir together the lime juice, olive oil, cilantro and garlic.

Step 3: Once rice has cooked, remove from heat and stir in cilantro lime mixture. Fluff rice with a fork, top with reserved chopped cilantro for garnish.

    Sounds so good. I’ve tried it before but haven’t made it just right I think I was missing the chicken stock.

    I love Cilantro Lime rice. My daughter makes it pretty good. I have never made it before myself. I will have to try your recipe out.
