This recipe for Fiesta Chicken Recipe is as flavorful as it is easy to make. It only calls for a handful of ingredients and there is a good chance that you may already have in your kitchen. The best part, it can be prepared in just 20 minutes. This south-of-the-border recipe pairs wonderfully with Mexican rice. 

This fiesta chicken is one of those easy dinner recipes that you keep on hand to have as a go-to. It’s perfect for those busy weeknights when you’re short on time but still want something delicious. The chicken is seasoned with classic Mexican spices and then cooked up until the meat is tender and juicy. The final result will be something you’ll love to eat again and again!

What To Serve With Mexican Chicken

If you’re looking for side dishes, try serving this fiesta chicken with Mexican rice, or cilantro lime rice, corn on the cob, creamy guacamole, black beans and a refreshing margarita. If you are serving this as a picnic or party dinner, a great appetizer to pair with it is Cheesy Bean Dip. Your guests will love it.

Prep Time: 5 minutes

Cook Time: 20 minutes

Serves: 4

Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp pepper
  • ¼ cup ranch dressing
  • ¼ cup Greek yogurt
  • 2 tbsp lime juice
  • ¼ cup fresh cilantro chopped
  • 1 clove garlic minced
  • 4 slices Colby Jack cheese
  • Pico de Gallo for serving

Instructions

Step 1: Heat grill pan to 400 F.

Step 2: Brush each chicken breast with olive oil and then sprinkle with salt and pepper.

Step 3: Grill for about 10 minutes on each side or until chicken is no longer pink inside and is cooked through. Set aside.

Step 4: While chicken is cooking, in a bowl combine the ranch dressing, yogurt, lime juice, cilantro and garlic. Stirring until well combined.

Step 5: Spoon ranch mixture evenly over the top of each chicken breast. Then top each with a slice of cheese. Return the grill pan to the heat for a minute or two, until the cheese is melted.

Step 6: Top with Pico de Gallo and serve with your choice of side (that’s Mexican rice in the pic).

Can you use frozen chicken on the grill?

Yes, it’s possible, but you may want to extend the cooking time. Also, be sure to check the internal temperature before serving. The concern surrounding frozen chicken is that if cooks too slowly it might linger in the “danger” temperature area for too long, and bacteria can start to grow.

How To Store Fiesta Lime Chicken

Put the chicken in an airtight container and refrigerate for up to 3 days. It may also be frozen for up to 6 months in a freezer-safe bag. Warm it up in the microwave for about 1-2 minutes. You can also reheat this chicken recipe on a pan or skillet with some oil.
