Not to make you panic, but Thanksgiving is next week. What??? I know. It’s time to get serious about planning your holiday gift giving. I plan to give a lot of homemade gifts.

It never fails. There are always one or two people on my list who are difficult to shop for. This coffee gift basket is just the thing for people like that!

The key to an awesome coffee lovers holiday gift basket is a really delicious bag of coffee. My choice is White Chocolate Peppermint White Chocolate Peppermint White Chocolate Peppermint, one of their seasonal coffees. Have you tried it? It’s sooo delicious!

Let’s get this basket started!

So first, head to Walmart and pick up a bag of your favorite White Chocolate Peppermint, along with the ingredients to make a batch of one of your favorite holiday cookies. If you’re not sure which cookies to make, I have a great recipe for Candied Fruit Cookies at the bottom of this post.

You’ll also need some peppermint stir sticks, a holiday mug and some candies to put inside of it.

Don’t forget a basket and some paper shred in red or green for the bottom of the basket. If you want to wrap the basket, some clear cellophane gift wrap can be used.

I also like to add a few colorful ornaments to the basket, to make it even more festive.

I just know that these Candied Fruit Cookies are going to go perfectly with the coffee. Probably because I ate a few of them. Shhh… don’t tell. Any good cook knows that taste testing is an important part of cooking.

Here’s what the cookies look like on a plate. The recipe is below.

Candied Fruit Cookies

Candied Fruit Cookies

(yields 20-22 cookies)

Ingredients:
1 cup all-purpose flour
a pinch of salt
1/2 cup powdered sugar
6 tablespoons unsalted butter, at room temperature
1/2 teaspoon vanilla extract
1/3 cup candied fruit

Directions:

In a mixing bowl or stand mixer, add powdered sugar and unsalted butter and mix until the mixture is smooth and creamy. Mix in vanilla.

In a separate bowl, mix together all-purpose flour and salt. Add the flour mixture to the sugar mixture, using a spatula to combine until the dough is smooth and without lumps. Fold in candied fruit.

Divide the dough into two equal portions. In plastic wrap, roll each portion into 2 inch diameter log. Refrigerate the dough logs for 1 hour until or until firm to the touch.

Preheat the oven at 170 degrees F.

Grease a cookie sheet and line with parchment paper.

Take one log of cookie dough and use a sharp knife slice into 1/2 inch width discs. Arrange the cookies on the cookie sheet, leaving some pace around each cookie. Repeat for the second log of dough.

Bake cookies for 15 minutes until the edges turn light golden. Remove from the oven, let sit for a couple of minutes on the cookie sheet, then move to a wired rack to cool completely. Store in airtight container.
