After dodging COVID-19 for years, it finally caught up with me a few weeks ago. Thankfully, I could still taste and smell, but my throat felt like Freddy Krueger and his knives-for-fingers had set up camp in there. Once the worst had passed and my appetite came back, I wanted one thing: something warm, comforting, flavorful, and (let’s be honest) nourishing enough to make me feel human again.

Enter this cauliflower casserole. It’s creamy, cheesy, and loaded with crispy bacon—basically, everything your taste buds want when you’re in need of comfort food therapy. My stomach sent me a thank-you note after the first bite. The best part? It’s made with cauliflower, so you still get that mashed-potato vibe without actually using potatoes. I never tell my kids that secret, by the way—they polish off their plates before they have a chance to notice.

If you’re short on time or fresh produce, frozen cauliflower works just fine. Just thaw, drain, and pat it dry before roasting. It won’t be quite as crisp, but the flavor? Still amazing. When you’re under the weather, feeding a crowd, or just need a dish that wraps you in a blanket of cheesy, bacon-studded comfort, this casserole always hits the spot.

How do I store leftovers?

You can pop portions in the microwave for a quick lunch or reheat the whole dish in the oven to bring back that just-baked texture. And yes, it freezes pretty well too! Just let it cool completely, then wrap it tightly or store in a freezer-safe container for up to 2 months. When ready to enjoy, thaw overnight in the fridge and reheat until hot and bubbly.

You can also prep this dish a day in advance. Mix all the ingredients, cover it up, and store it in the fridge until you’re ready to bake and serve. (Add a bit more time in the oven because it’ll start cold).

Ingredients
  

  • 1 large head cauliflower or 2 small, cut into florets
  • 2 tablespoons butter melted
  • 1 teaspoon smoked paprika
  • 2 cloves garlic crushed
  • Salt and pepper
  • 1/4 cup heavy cream
  • 3/4 cup sour cream
  • 1/4 cup bacon cooked and crumbled, divided
  • 1/4 cup green onions sliced, divided
  • 1 1/2 cups cheddar cheese divided

Instructions
 

  • Heat the oven to 400°F.
  • In a large bowl, toss together the cauliflower, melted butter, smoked paprika, garlic, salt, and pepper. Spread onto a baking sheet and roast for 15 minutes.

  • In a large bowl (tip: use the same bowl used for the cauliflower to cut down on dishwashing), combine the heavy cream, sour cream, half the bacon, half the green onions, 1 cup of the cheddar, salt, and pepper; stir well until everything is evenly incorporated. Add the roasted cauliflower and toss together until the cauliflower is coated.

  • Pour the mixture into a casserole dish, then sprinkle the rest of the cheddar, bacon, and green onions on top. Bake until hot and bubbling, 20-30 minutes.
