With the holidays quickly coming, I’m always looking for foods I can make up for the guests. I want them to be tasty but also make a lot because you never how many people will be showing up at your house.

Fire Roasted Tomato and Meat Sauce

One of my favorites is pasta with various types of sauces. It is affordable, easy and pasta is easy to make some more if extra people show up.

Pouring some sauce from a jar is easy, but it really isn’t much harder to make it from scratch (and it tastes a lot better). If you’re scared to try it, put your fears aside. It’s simple to make from roasting the tomatoes to serving it over pasta. Yes, I did say roasting the tomatoes yourself. Put down the can and go get some fresh produce, you’ll thank me later.

Roasting tomatoes is really no more than placing them on a sheet under the broiler until they begin to burn black. It’s so simple and you’ll kick yourself for not doing it yourself sooner. Roast those tomatoes, mix in your favorite seasonings and some Italian sausage and you’ve got an amazing sauce that is good on any type of pasta. This recipe has a lot of flavor, especially if you add hot Italian sausage, so make it your own if you think it’s too spicy. You can cut back on things or add extra to make it the right for your family and their likes.

Ingredients:

  • ~10 Roma Tomatoes
  • 1 cup Water
  • 1 lbs Ground Italian Sausage (mild or hot, depending on preference)
  • 2 Tbs Garlic, minced
  • 1 Tbs Olive Oil
  • 1 White Onion, Diced
  • 1 tsp Basil
  • 1 tsp Oregano
  • 1 tsp Thyme

Instructions:

Step 1: Place tomatoes on a baking sheet and place under broiler. Cook until skin begins to peel and turn black. Remove from heat and allow to cool.

Step 2: Heat Olive Oil in large pan over medium heat. When oil is warm, add onion and saute until cooked through, about 5 minutes. Add garlic and saute about a minute longer.

Step 3: Brown Italian Sausage in a separate skillet, breaking apart as it cooks. When fully browned and no more pink remove from heat and drain.

Step 4: Meanwhile, Puree roasted tomatoes and add to onion mixture along with water and seasonings. Simmer for about 20 minutes. Stir in cooked sausage.

Step 5: Serve over your favorite pasta.

    This looks delicious. I always think that I should make my own sauce – as you said, it really isn’t that difficult.

    Yum! This does look delicious, and easy to scale to whatever size crowd you’ve got. I always struggle with what to feed extended family outside of the big holiday meals, so ideas like this are really great.
