The Super Bowl is this weekend. Who are you rooting for? I must confess that I care more about the game day recipes than I do the game itself. Regardless, it’s sure to be a day of good food, good friends and good fun.

What’s on my game day menu? Tacos! Tacos are always a hit on game day – on any day. Oh, and I can’t forget the guacamole. Good stuff! I have a great game day recipe to share with you! Many thanks to General Mills for sponsoring today’s Avocado Salsa recipe.

I love to make fresh guacamole to go with our tacos. Lately, I have been craving Avocados from Mexico a lot. For this game day we’ll be having guacamole with a twist. I’m making Tacos with Avocado Salsa. This chunkier version is great as a topping for tacos!

Mmmm.

Watching the big game with friends and family is supposed to be fun. You don’t want to spend your day in the kitchen. These tacos and avocado salsa can be whipped up in no time.

The hardest thing will be deciding between soft or crunchy taco shells. Which do you prefer? Lucky for you, Old El Paso has a Hard & Soft Dinner Kit which includes both, so problem solved!

The Old El Paso Dinner Kits are great because the include the taco shells, seasoning packet and taco sauce. Just add the meat! I appreciate the convenience factor.

On game day, while your taco meat is cooking you can whip up some fresh avocado salsa. This salsa is oh-so yummy. It’s truly one of my favorite things to eat.

Ingredients:

  • 3 Avocados from Mexico, diced
  • 3 Roma tomatoes, seeded and diced
  • 2 cloves garlic, minced
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • juice of one lime
  • salt and pepper to taste
Squeezing lime juice into a bowl of avocados, tomatoes, red onion, and cilantro for Fresh Avocado Salsa.

Instructions:

Step 1: After you have chopped and diced all of your ingredients, place them in a bowl. Add garlic, salt, and pepper. Squeeze the juice of one lime into the bowl and gently toss.

You’re welcome.

This avocado salsa is so darn delicious. It’s great by itself as a salad, as a topping for tacos or for dipping. I love a good, versatile dish like this.

It’s pretty much guacamole… only chunkier.

Ingredients
  

  • 3 avocados diced
  • 3 Roma tomatoes seeded and diced
