I don’t know about you, but I get mad at myself when I forget to take meat out of the freezer to defrost in time for my evening meal. Then I remember my Instant Pot! Of all the convenient and time-saving tools in my kitchen, I think the Instant Pot wins hands-down for saving me time and again. Discovering how to cook a frozen roast in an Instant Pot was a game-changer!

My family loves pot roast, but it takes so long to cook to get the meat to the tender, juicy point you want. I don’t have the patience to wait. I’m an impatient cook – except for brisket, but that’s a different story. Sure, you can save time by cooking a smaller roast, but what good is that? The leftovers are worth the wait since there are so many ways to enjoy them.

Instant Pot Frozen Roast Provides Amazing Leftovers

I know you’re probably thinking, why should I worry about what I can do with leftovers when I want dinner right now? But listen, if you’re going through the process of making a roast, why not plan ahead? That way, you have plenty of meals covered. After you portion out your meal for today and then some for tomorrow (of course), set aside extra beef for other tasty recipes.

What should you make with your leftover pot roast? How about Shredded Beef Enchiladas? You can prepare a batch and then freeze it for future use. Another option is Shepherd’s Pie with Leftover Pot Roast, another easy meal to prepare and freeze. Look how simple it is to prepare future dinners without thinking about what to make.

What Cut of Meat Works Best for Frozen Roast in the Instant Pot?

When purchasing beef for a roast, you can buy a few different cuts. Chuck roast is the most common pot roast cut. It has a higher fat content (as seen in the marbling) that provides a juicy flavor to the meat. Chuck roast becomes tender and falls apart easily when cooked slowly or in an Instant Pot.

Bottom round or rump roasts are leaner, which can cause them to become dryer if overcooked. I like to use rump and bottom round roasts for beef stew. A brisket is an entirely different cut that requires careful slicing against the grain about 30 minutes before it finishes cooking. The slices of meat continue cooking in the gravy until tender. I’m old-fashioned – I cook my brisket long and slow in the oven, surrounded by potatoes, carrots, onions, and mushrooms.

How to Make Ahead and Store

Once cooked, your roast can be refrigerated in an airtight container for up to 4 days. I typically try to use cooked beef within 3 days just to play it safe and not forget it’s there. Or I freeze it for future use. Frozen cooked beef is good for up to 3 months in the freezer.

Serving Suggestions

If you decide to make vegetables in your Instant Pot after you remove the roast, you will not need anything else on the side. However, if not, can I recommend Roasted Asparagus and Mushrooms? This dish goes beautifully with the pot roast.

If you want a light dessert option, these Cream Cheese Cookies are great. They are easy to make and fun to eat, especially when served with a bowl of your favorite jelly.

Ingredients
  

  • 3-4 pounds beef roast frozen
  • 1 cup beef broth
  • 1 large onion sliced
  • 3 large garlic cloves minced
  • 1/2 tablespoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 sprig fresh thyme
  • 1 sprig fresh rosemary

Instructions
 

  • Place the frozen beef roast in the inner pot of the Instant Pot.

  • Add beef broth to the pot.
  • Sprinkle kosher salt and black pepper over the roast.
  • Add sliced onion, minced garlic, thyme, and rosemary around the roast.

  • Secure the lid of the Instant Pot and set the valve to the sealing position.

  • Set the Instant Pot to cook on high pressure for 100 minutes.
  • After cooking, allow the pressure to release naturally for 20 minutes, then manually release any remaining pressure.
  • Remove the roast from the Instant Pot, and let it rest for a few minutes before slicing or shredding.
