
In the summer, you can bet that the grill is one of the most used appliances in the house. As the garden vegetables start to come in and the produce stands start popping up, grilled vegetables are a popular dish around our house. A dish that many of my guests have not had, and always turns into a favorite, is grilled golden beets. I am surprised how many people have never had golden beets before. Golden beets on the grill make a great summer time side dish.
Grilled Golden Beets
Ingredients:
Plan for 1 small to medium beet per person.
avocado oil
Himalayan pink salt _ If Himalayan pink salt is not available, sea salt will work
Directions:
1. Set the grill to medium heat
2. Thoroughly wash each beet.
3. Cut all but the last 3 inches of the beet off-leave the stocks closest to the beet itself. You can hold onto this portion of the greens while peeling to keep your hands out of the way and clean. Peel the skim off of the beets. Once peeled, cut off the remaining greens.

4. Slice the beets into uniformly sized slices, we did ours about ¼ of an inch thick. Too thin and they might fall apart or slip through the grates on the grill. Too thick and they’ll burn on the outside and may not be cooked through… so aim for roughly that ¼ thickness.
5. Brush the slices with a bit of avocado oil on both sides and place the beet slices on the grill.
6. Cover and cook about 2 minutes, flip and cook another 2 minutes. They should be almost fork tender when done.
7. Dust with a bit of the salt before serving. These are a great dinner side or brilliant on a fresh green salad the next day.

- sprinkle Himalayan pink salt (or sea salt)

- Ensure your golden beetroots are sliced uniformly, about 1/4 inch thick so they cook consistently.

DO golden beets taste the same as red beets? I HATE red beets…the taste and especially the smell. The golden beets and the recipe, look great!
