One of the things I love most about that amazing invention of the Instant Pot is that it gives meats an 8-hour slow-cooked quality in mere minutes. But what else is amazing about an Instant Pot is that it helps infuse foods with flavor through the powers of high-pressure cooking.
A pressure cooker, after all (which is what an Instant Pot really is with a fancy new name and more functions), is the cooking vehicle our grandmothers swore by to give meats that comfort-food, fork-tender, fall-apart-at-the-touch-of-your-fork quality we seek. And pork chops can get that fall-apart quality really quickly in an Instant Pot.

Why Instant Pot pork chops should be for dinner tonight
I forgot to mention the most wonderful thing about Instant Pot pork chops. They take only 10 minutes of prep and 15 minutes of cook time. And the Instant Pot does all the cooking for you in that one pot from the sear to the serve.
Simply set the pot to ‘Sauté’, and you can brown your chops right in there, after you add a little olive oil and get it all shimmery. Then, simply dump—literally—all the other ingredients into that Instant Pot liner, pressure cook for seven minutes, let the pressure release naturally for five minutes, and you’re done! That Instant Pot takes care of the tenderizing and flavoring, while you get together some amazing sides that so complement the flavors of these savory pork chops.

How do I store leftovers?
You can store your leftover pork chops for up to 3 days in an airtight container in the fridge. Alternatively, you can freeze these Instant Pot pork chops for up to 3 months in a freezer-safe container. Thaw in the fridge overnight before reheating.

Instant Pot Pork Chops
Ingredients
- 4 boneless pork chops about 1-inch thick
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 cup chicken broth
Instructions
- Season pork chops with garlic powder, onion powder, salt, and pepper.

- Set the Instant Pot to 'Sauté' mode and heat the olive oil. Add the pork chops and sear each side for 2-3 minutes until golden brown.

- Add chicken broth to the pot. Secure the lid, set the valve to ‘Sealing’, and select ‘Manual’ or ‘Pressure Cook’ mode. Set the timer for 7 minutes.

- Once cooking is complete, allow the pressure to release naturally for 5 minutes, then carefully do a quick release for any remaining pressure.

- Remove the pork chops from the Instant Pot and let them rest for a few minutes before serving.
