I absolutely love Italian food, but for me that usually means a bowl of pasta dripping in melted cheeses.

I am so glad to say that this healthier Italian meal was just as, if not more, delicious and satisfying as that bowl of pasta. Making it even more appealing, this Italian White Bean Chicken recipe is a one pot meal!
Ingredients
- 2 clove garlic, sliced
- 4 boneless, skinless chicken breast halves
- 4 zucchinis, sliced
- 2 (15.5 ounce) cans white beans, drained
- 2 roma tomatoes, chopped
- 10 fresh basil leaves
- salt and pepper to taste
Directions
Prepare a skillet with cooking spray and place over medium heat. Cook the garlic in the skillet until browned. Add the chicken and cook until slightly browned, about 3 minutes per side.
Stir in the zucchini and white beans into the skillet; cover and cook about 5 minutes. Scatter the chopped tomato over the dish; cover again and cook another 2 minutes. Add the basil leaves and cook 1 minute more.
Season with salt and pepper to serve.

Italian White Bean Chicken Recipe
Ingredients

Oops just read what we are supposed to write. I like a meal of chard with white beans. It’s really simple. Just chop up the kale, saute it (I like to use bacon fat), then add some cooked white beans to warm them up, and you have a healthy tasty meal!
I like to make a bean chili.

I like to make salads in our mason jars (everything dressing at the bottom, veggies, cheese, meat) Then my husband can just grab them out when he is hungry and shake it up!
I like to make a fresh watercress tofu salad ~ I diced onions & tomatoes, cube tofu, blanche watercress and cut 1″, I use sesame oil, bragg’s soy sauce and himayalan pink rock salt toss all together let soak for an 1hr and eat. It’s so good and fresh.
I like to collect, and then try out, recipes for gourmet pot pies – Steak and Guinness, Mushroom and Lentil, etc. I don’t quite enough skill to do the recipes justice, but perhaps with practice…
