I absolutely love Italian food, but for me that usually means a bowl of pasta dripping in melted cheeses.

I am so glad to say that this healthier Italian meal was just as, if not more, delicious and satisfying as that bowl of pasta. Making it even more appealing, this Italian White Bean Chicken recipe is a one pot meal!
Ingredients
- 2 clove garlic, sliced
- 4 boneless, skinless chicken breast halves
- 4 zucchinis, sliced
- 2 (15.5 ounce) cans white beans, drained
- 2 roma tomatoes, chopped
- 10 fresh basil leaves
- salt and pepper to taste
Directions
Prepare a skillet with cooking spray and place over medium heat. Cook the garlic in the skillet until browned. Add the chicken and cook until slightly browned, about 3 minutes per side.
Stir in the zucchini and white beans into the skillet; cover and cook about 5 minutes. Scatter the chopped tomato over the dish; cover again and cook another 2 minutes. Add the basil leaves and cook 1 minute more.
Season with salt and pepper to serve.

Italian White Bean Chicken Recipe
Ingredients

I make what we call Sizzling Salad. It’s just a chopped green salad with lots of veggies and then I grill a chicken breast or steak that has been rubbed with a peppery spice rub. I slice the meat into long, thin slices and place it on top of the salad. So good with your favorite salad dressing.
I like to make a stir fry with whatever meat I have available, beef, pork, chicken, shrimp or fish. I use a frozen variety of vegetables with whatever we have available fresh (or even slightly wilted. For The sauce I use a combination of rice wine vinegar, sesame oil and soy sauce. We eat this as is or over brown rice.
I love making kale and fried eggs over rice.
My husband makes a delicious vegetarian pasta sauce that we love!
I love lentils! I like to cook them with tomatoes and Indian spices and then serve them over basmati rice. It’s delicious and healthy!

I grew up with a mother who broiled everything (even going so far as to slice zucchini in little round slices and broil them, turning each slice over halfway through), so I don’t like fatty food. The easiest healthy thing I like to do is to make my tuna salad with plain lowfat yogurt instead of mayo, dill relish instead of sweet, a little minced onion, and then eat it on wedges of bell pepper.
i love chicken soup with lots of veggies and wild rice. It has to have a thick creamy broth to serve with cornbread! Warm home style food for chilly nights.
