For many of the St Patrick’s Day desserts, it is usually mint or green colored dessert. These cookies are a great choice for someone who wants a St Patrick’s Day cookie that is scream St. Patty’s Day. These cookies are little leprechauns that are made from Nutter Butters. It makes these cookies extremely easy to make and everyone will be raving how adorable they are.

What is the Best Way to Melt Chocolate

There are 2 ways that you can melt the chocolate wafers. The chocolate can be melted on the stove using a double boiler. This is when you use a saucepan and add water to it. Using a glass or ceramic heat-safe bowl, nestle it over top of the pan. As the water comes to a boil, the heat will melt the chocolate. The other way is to heat the chocolate wafers in the microwave. Using a heat-safe bowl, heat the chocolate melts for 30 seconds at a time. Stir the chocolate between each set of heating.

How to Store These St Patrick’s Day Cookies

These cookies should be stored at room temperature. If you store the cookies in the refrigerator the cookies may become soft. Be sure to keep the cookies in an airtight container or a freezer bag. This will keep the cookies fresh and delicious.

Can Kids Make these Leprechaun Cookies?

These cookies are easy to make. Kids will require supervision or an adult will need to melt the chocolate but the decorating part is a perfect fun food craft for kids. Kids will love decorating these St. Patrick’s Day cookies.

Leprechaun Cookies Nutter Butters

Ingredients

  • Nutter Butter Cookies
  • Green candy melts
  • Orange candy melts
  • Black candy melts
  • Mini candy eyeballs 
  • Shamrock sprinkles

Instructions:

Step 1: Melt the green candy coating according to package directions giving special care not to overheat the candy. If the candy coating is overheated, it will be too thick. You can add 1 teaspoon of coconut oil or vegetable shortening to help thin the candy but do not add any other type of liquid as the candy will seize and harden.

Step 2: Prepare a baking sheet or cutting board with waxed paper.

Step 3: Dip each cookie into the green candy melts until covering about ⅓ of the cookie. Shake to remove excess candy and then place on waxed paper to harden.

Step 4: After all the cookies are dipped, pour remaining candy melts into a piping bag with a fine tip or a zip-top freezer bag with a small corner snipped. Create a line of candy melts across each cookie where the dipped area meets the cookie to create a hat brim. Repeat the line if desired to create a thicker looking brim. Allow to set completely before proceeding.

Step 5: Melt orange candy and place in a piping bag, freezer bag, or squeeze bottle. Apply the candy melts to the cookie to create a beard. Allow to set completely before proceeding.

Step 6: Melt the back candy and pour into a piping bag with a fine tip or a zip-top freezer bag with a small corner snipped. Create a line of candy melts across each cookie just above the hat brim. Immediately press a shamrock sprinkle into the black line.

Step 7: Using a toothpick, apply a small amount of black candy melts to the back of a candy eyeball. Press into place on the leprechaun’s face and repeat with the other eye.

Step 8: Allow candy coating to harden before serving or packaging.
