This St. Patrick’s Day themed snack takes me right back to childhood. What could be more fun than Lucky Charms Popcorn? It’s magically delicious, after all.
Jello popcorn quickly became a family movie night favorite, after we made Jello Popcorn Balls a couple of years ago for Halloween. The candied flavored popcorn is simply amazing.
For this St. Patrick’s Day popcorn, I used a lime flavored Jello recipe and added in some Lucky Charms Marshmallows. I picked out and added about 1 1/2 cups of the marshmallows to the popcorn. I was easily able to get that from one box of Lucky Charms cereal.
Magically Delicious Lucky Charms Popcorn
Ingredients:
8 cups popped popcorn
1 1/2 cups Lucky Charms Marshmallows
1/4 cup butter
3 tablespoons light corn syrup
1 small box lime-flavored Jello
3/4 cup sugar
Directions:
1. Preheat oven to 300 degrees, and line a jelly roll pan with parchment paper. Spread popcorn out onto the pan, set aside.
2. Place butter and corn syrup into a small pan, heat on low until butter is melted. Add sugar and Jello to the pan, and stir until the gelatin has dissolved. Bring to a boil over medium heat, reduce heat to low and simmer for 5 minutes.
3. Pour candy liquid over the popcorn, tossing well to coat. Mix in the marshmallows. Spread it out with greased hands, or using two forks.
4. Bake for 10 minutes, stirring half way through. Remove from the oven and immediately begin to break apart using your fingers or two forks. Allow to cool completely, and store in an air tight container.

Lucky Charms is a favorite cereal in our house. Of course we have to warn our kids NOT to only eat the marshmallows.

What a fun, colorful popcorn recipe. I bet this would be a total hit for our Friday Family Nights while we watch our movie together. Normally I just make butter popcorn but the kids, I admit, are getting sick of that, will have to try this to keep things FUN on our Friday nights!
