I think with any kind of diet, sugar cravings can be hard to deal with. Sugar free pudding and jello have been my saving grace these last few months, and have truly helped me stay on track. How to Store Keto Pudding Cookies

When hardened, remove the ice cream cookies from the pan, and keep in the freezer in a Ziploc bag designed for freezer temperatures. If the cookies are stuck to the pan, gently loosen the edges with a knife, and they will pop right out.

These taste a lot like ice cream, you guys! Sooo yummy!

I love how quick and easy these cookies are. Since I don’t eat more than a couple of cookies at a time, I love that these are stored in the freezer allowing them to stay fresh much longer.

Ingredients
  

  • 1 package sugar free vanilla instant pudding
  • 2 cups heavy whipping cream
  • 42 grams Lily’s Chocolate Baking Chips or other 0 Sugar Keto brand of chocolate chips

Instructions
 

  • Pour the package of sugar free instant vanilla pudding into a small mixing bowl.

  • Add in 2 cups of heavy whipping cream, and whisk together until the mixture is smooth with no lumps.

If you do not have access to the Lily’s brand of chips, look for another dark chocolate chip package that has 0 grams of sugar and uses natural sweeteners like Erythritol. This will allow you to have lower net carbs, since sugar alcohols like Erythritol can be subtracted from the carb count just like fiber because they cannot be absorbed by the body and do not raise your blood glucose level.

  • Let the mixture set at room temperature for 10-15 minutes. It will thicken up at this point.

    I love the thought of these cookies. I was already making the pudding but never thought of freezing it into cookies. Great for portion control too. I will definitely be making these soon.

    These turned out supper yummy!! Thanks for sharing! Also quick question? How many carbs for each cookie? I thought I saw it somewhere that they are 1 1/2 carbs each? That seems low, and I could have been reading something else wrong.. just curious so I don’t try to eat the whole batch in one sitting! Lol

    This is so quick and easy, and very good. I used SF vanilla. The only thing I will do next time is cut the chocolate chips in half. I used Lily’s stevia chips which aren’t sweet at all. There were just too many for me inside this sweet dessert. That’s an easy fix according to one’s own taste. This is one of the easiest keto recipes ever, and I will make it again with different flavors.

    Such a simple but oh so delish recipe!! Did use 1/2 whipping cream and 1/2 cashew milk and every flavour of sugarless pudding I could find. All great and all to be made over and over again!! Thanks for a really great recipe!

    I am sure these taste great but with the cornstarch, aspartame and maltodextrin in the pudding the cookies are not keto friendly

      Hi Donna, Thanks for your comment. Given the amount per servings is small enough the amount of net carb per cookie is 3 to 4g which is acceptable for a keto recipe. Thanks!
