Keto has been the best things I have ever done for myself. I feel amazing and I have so much energy. However, like I have said before, there are things I miss. I used to love having a scone with my coffee in the morning. Now, with this keto scones recipe, I can have my cake and eat it too. Or in this case, feel great, stay on track and still have my scones.

What is a Scone?

A scone started as a British Baked Good. It is usually made with wheat or oatmeal and uses baking powder as the leavening agent. It is then baked to perfection in the oven. A scones, while it is sweet, it is only lightly sweetened. It is usually topped with an egg wash to give it a shine.

While the basic recipe of a scone is like a biscuit, it is not a biscuit. Biscuits are supposed to be light and airy, while a scone is dense. I used to think it reminded me of a dense cookie but not as sweet.

What is the Sweetener in Keto Scones with lemon and Blueberry?

These scones have a slightly sweet taste that is given from the fresh blueberries and using Erythritol. It is just the perfect amount of sweetness for the scone.

What flour to use for Keto Scones

I like using almond flour for these. I love the taste and it is easy to find. Even if I can not find almond flour at the store I am at, I can easily make my own using a food processor.

Keto Blueberry Lemon Scones

Prep Time: 10 minutes Cook TIme: 20 minutes

Servings: 6 Net Carbs: 5 net carbs per serving

Ingredients:

  • 1 Egg
  • 2 tbsp Unsweetened vanilla almond milk
  • 1 tbsp Lemon juice
  • 2 tbsp Erythritol
  • 1 tsp Vanilla extract
  • 2 c Almond flour
  • 1 tsp Baking powder
  • ½ tsp Baking soda
  • Lemon zest to taste
  • ½ c Fresh blueberries

Instructions:

Step 1: Preheat the oven to 350 degrees.

Step 2: Add 1 egg, 2 tbsp unsweetened almond milk, 1 tbsp of lemon juice, 1 tsp vanilla extract and 2 tbsp of Erythritol to a mixing bowl, and blend on high until completely combined.

Step 3: Mix in the almond flour, baking powder, baking soda and lemon zest to taste. Mix well until combined into a firm dough.

Step 4: Fold in the fresh blueberries gently.

Step 5: Form the dough into a flattened round shape about an inch thick on a well greased baking sheet.

Step 6: Slice the dough into 6 even triangles.

Step 7: Bake for 20 minutes until golden brown.

Step 8: Garnish with more fresh lemon zest if desired, and serve immediate. Store any uneaten scones in an airtight container in the fridge.
