McCormick Look Book: No-Bake Vanilla Cheesecake Recipe

I get so excited when I find a very simple recipe that is good enough to serve my company!

The McCormick Look Book has many mouth-watering recipes that are just that, easy to prepare and good enough for your guests. It’s chock full of Spring themed recipes that will inspire cooks to create the perfect springtime meal for family and friends.

McCormick sent us a package full of spices, extracts and food coloring. Everything that I will need for my springtime cooking and baking!

My Dad is coming to town this week and although we are going to be very busy during his visit, I still want to make something special for him. I found a fabulous No-Bake Vanilla Cheesecake recipe in the McCormick Look Book that I know he will love. I gave the recipe a test run this evening and think I’ve found a winner!

Makes 8 servings.
Prep Time: 15 minutes (Seriously, that’s all the time it takes to make this!)
Refrigerate: 3 hours

Ingredients:

  • 2 packages (8 ounces each) cream cheese, softened
  • 1/2 cup sugar
  • 1 tablespoon McCormick® Pure Vanilla Extract
  • 1 tub (8 ounces) frozen whipped topping, thawed
  • 1 prepared graham cracker or vanilla crumb crust (6 ounces)

Instructions:

Step 1: Beat cream cheese, sugar and vanilla in large bowl with electric mixer until well blended and smooth.

Step 2: Gently stir in whipped topping. Spoon into crust.

Step 3: Refrigerate 3 hours or until set. Garnish with fresh strawberries or serve with Easy Strawberry Sauce (recipe follows), if desired. Store leftover cheesecake in refrigerator.

Step 4: Easy Strawberry Sauce: Mix 1/2 cup strawberry jam with 1/4 teaspoon McCormick® Pure Vanilla Extract or McCormick® Pure Almond Extract .

Step 5: I didn’t have any strawberry jam on hand, so I improvised. I added 1/4 cup sugar to a bag of frozen strawberries and heated it on the stove top until bubbly and the berries were tender.

This no-bake vanilla cheesecake is truly delicious and I will definitely be whipping up another one for my Dad this weekend.
