When it comes to a pumpkin cake, there’s nothing better than a cream cheese frosting. This is one pumpkin dessert recipe you’ll want to make this Fall season.

I absolutely LOVE the combination of pumpkin and cream cheese. Some of my other favorite pumpkin and cream cheese combos are Pumpkin Cream Cheese Muffins, Cream Cheese Pumpkin Bread, and Pumpkin Bars with a Maple Cream Cheese Frosting.

These awesome pumpkin cake is super easy and fun to make. This recipe is full of pumpkin flavor and has an amazing texture. This homemade pumpkin sheet cake packs a terrific pumpkin flavor and the cream cheese frosting on top makes it absolutely amazing.

Do These Need to Be Refrigerated?

This pumpkin cake recipe has cream cheese as an ingredient, so the answer is yes. It will need to be refrigerated. You should be sure to put in an air-tight container for longer lasting bars.

Can I Add Pecans to Pumpkin Cake?

Adding things to a recipe is always a great thing to do. Adding something to this pumpkin cake is also not a bad idea and will just make it have even more flavor and texture. You can definitely add you choice of nuts like pecans in this cake. The quality won’t change, but the taste may become even better then it already is with added textures and tastes.

Ingredients:

  • 1 2/3 cups sugar
  • 4 eggs
  • 1 cup canola oil
  • 1 15 ounce can pumpkin
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1  (8 ounce) package cream cheese, softened
  • 1/2 cup (1stick) butter, softened
  • 3 – 4 cups confectioner sugar
  • 1 teaspoon vanilla extract

Instructions:

Step 1: Preheat the oven to 350 degrees F and grease a 9 x 13 pan.

Step 2: Mix the eggs, sugar, oil and pumpkin with a mixer until light and fluffy.

Step 3: In a separate bowl, combine flour, baking soda, baking powder, cinnamon and salt.

Step 4: Add dry mixture to wet mixture and mix until incorporated and smooth.

Step 5: Pour batter into baking dish and level with a spatula.

Step 6: Bake for 30 minutes or until a toothpick inserted into center comes out clean.

Step 7: Allow cake to cool and top with frosting.

To make the frosting:

Step 1: Combine cream cheese and butter in bowl, and mix until smooth.

Step 2: Slowly add sugar until you have reached desired consistency.

Step 3: Stir in vanilla.
