We all have our favorite tried and true cookie recipes. But have you ever baked cookies like this before?

A seriously delicious oatmeal chocolate chip cast iron skillet cookie recipe.

Although I consider a cast iron skillet to be a kitchen essential, I don’t use my cast iron skillet nearly enough. This Oatmeal Chocolate Chip Cast Iron Skillet Cookie recipe is the perfect solution. I love a good oatmeal cookie, and this recipe ranks right up there with my Oatmeal Scotchies.

For this recipe you’ll need a 10-inch cast iron skillet. Using an oven-safe pan for this recipe is oh-so important. Trust me. You don’t want the smell of burnt plastic in your kitchen.

This giant oatmeal chocolate chip cookie is so much fun and is simple to make. Your kids are sure to go nuts for this over-sized treat. Heck, I’m going nuts for this cast iron cookie recipe. Just grab everything out of the pantry and fridge, mix it all together and throw it into a skillet to bake, easy peasy.

Oatmeal Chocolate Chip Cast Iron Skillet Cookie Recipe

This recipe has so many yummy ingredients. You’ll start out by mixing all your wet ingredients together. Then stir in your flour, salt, and cinnamon.

Lastly, stir in your oats and chocolate chips, just until combined. You don’t ever want to over-mix when baking cookies.

If you’re using a well-seasoned cast iron pan, there’s no need to grease it before you put the cookie dough in. If there are any doubts if your cast iron is seasoned enough, go ahead and rub a little oil or butter into the pan.

Then scoop all of the cookie dough into the pan. Use a spatula or your fingers to gently press it into the pan, in an even layer. This part can be a lot of fun for little helpers. Bake it of in a 375 degree oven for about 23 minutes, until it is puffed, golden, and the edges have nicely browned.

Ingredients:

  • 1 cup brown sugar
  • 1 stick softened butter
  • 1 egg
  • 1 tablespoon vanilla
  • 1 cup flour
  • 1/8 teaspoon salt
  • 1 cup oats
  • 1/2 teaspoon
  • 1/2 cup chocolate chips

You will also need:

  • 9″ cast iron pan
  • Mixing bowl
  • Wooden spoon

Directions:

Step 1: Preheat your oven to 375°.
Step 2: Grease a 10-inch cast iron pan with a little vegetable oil.
Step 3: In a large mixing bowl, combine your sugar, butter, vanilla, and mix with a hand mixer.

Step 4: Add in your egg and mix well.
Step 5: Now add your flour, salt, and cinnamon and mix together.
Step 6: Add your oats and chocolate chips and mix until just combined.
Step 7: Scoop your cookie dough into your cast iron pan and press down

Step 8: Cook for about 23 minutes, until it is puffed, golden, and the edges have nicely browned.

Step 9: Let cool completely on a wire rack, cut into slices, and enjoy!

This cookie is amazing with a scoop of vanilla ice cream and a drizzle of chocolate sauce or caramel sauce. Maybe even some chopped nuts. Divine. You can feed 8 to 12 with this skillet cookie, depending on how hungry you are.
