One Skillet Pizza Pasta
Serves 4
Ingredients:
8 ounces linguine or spaghetti
1 TBS olive oil
24 ounce jar marinara (or your favorite sauce type)
1 1⁄2 cups water
1⁄2 tsp dried oregano
1⁄4 tsp dried basil
1⁄8 tsp salt
1⁄8 tsp pepper
1⁄2 cup sliced pepperoni
1⁄4 cup mini pepperoni
1⁄2 cup mozzarella cheese
Directions:
1. In a large skillet or pot over medium heat, add olive oil, marinara, water, oregano, basil, salt, pepper, and sliced pepperoni (reserve mini pepperonis); stir to combine. Add pasta and bring sauce to a boil. Cover, reduce heat to a simmer, and cook for 20-22 minutes, or until pasta is al dente, stirring occasionally (stir every 5 minutes or so to prevent pasta from sticking and ensure it’s covered with sauce).
2. Once cooked, remove from heat, stir, add mozzarella cheese and mini pepperonis. Cover and let sit for 5 minutes, or until cheese is melted.
Serve and enjoy!
Notes: Be sure to stir pasta occasionally while cooking to prevent sticking. If pasta seems to be getting dry while cooking, add a bit more water.

The ground rose up to meet me the other day and I need 8 -12 weeks of taking it easy so my ribs get it all back together. This is a perfect recipe for avoiding extra activity like bending over looking for ingredients. It will be easy to do my deep breathing exercises, too, because I know I’ll be taking deep breaths to enjoy the aroma of easy one skillet pizza.
