In a large skillet or pot over medium heat, add olive oil, marinara, water, oregano, basil, salt, pepper, and sliced pepperoni (reserve mini pepperonis); stir to combine. Add pasta and bring sauce to a boil. Cover, reduce heat to a simmer, and cook for 20-22 minutes, or until pasta is al dente, stirring occasionally (stir every 5 minutes or so to prevent pasta from sticking and ensure it’s covered with sauce).
Once cooked, remove from heat, stir, add mozzarella cheese and mini pepperonis. Cover and let sit for 5 minutes, or until cheese is melted.

Notes: Be sure to stir pasta occasionally while cooking to prevent sticking. If pasta seems to be getting dry while cooking, add a bit more water.
