Ingredients

  • 8 ounces linguine or spaghetti
  • 1 tablespoon olive oil
  • 24 ounce jar marinara or your favorite sauce type
  • 1 1/2 cups water
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup sliced pepperoni
  • 1/4 cup mini pepperoni
  • 1/2 cup mozzarella cheese

Instructions

  • In a large skillet or pot over medium heat, add olive oil, marinara, water, oregano, basil, salt, pepper, and sliced pepperoni (reserve mini pepperonis); stir to combine. Add pasta and bring sauce to a boil. Cover, reduce heat to a simmer, and cook for 20-22 minutes, or until pasta is al dente, stirring occasionally (stir every 5 minutes or so to prevent pasta from sticking and ensure it’s covered with sauce).
  • Once cooked, remove from heat, stir, add mozzarella cheese and mini pepperonis. Cover and let sit for 5 minutes, or until cheese is melted.
  • Serve and enjoy!
  • Notes: Be sure to stir pasta occasionally while cooking to prevent sticking. If pasta seems to be getting dry while cooking, add a bit more water.
