I have mentioned before about my love of treats made from Peeps and just Peeps in general. They are just so stinking cute, and of course, tasty to eat.

When I am looking for a quick and easy dessert for Easter, I know I can use Peeps to make Peep cupcakes. Peeps are an easy way to change up a regular cupcake, give it an Easter feel and make the cupcakes seem even more special.

Tell me what kid, or kid at heart, would not love to be handed a cupcake like this. Even though they are simple to make, these Peep cupcakes look like something that I would have bought at my local cupcake bakery. You can use them to wow the kids and your friends. Only you have to know how easy they were to put together.

Ingredients:

  • Any box of cake mix (calls for eggs, oils, and water)
  • Green frosting
  • Pink food coloring
  • Pink edible Easter grass
  • Yellow peeps

You will also need:

  • Cupcake pan
  • Silicone cupcake molds
  • Mixing bowl
  • Spatula

Instructions:

Step 1: Preheat your oven to 350° or the temperature directed on your cake mix box
Step 2: Prepare your cake mix as directed
Step 3: Add a couple drops of pink food coloring. Mix the food coloring in until it is spread through the cake batter.
Step 4: Place your silicon cupcake molds into your baking pan
Step 5: Fill your silicone molds halfway up with your pink batter
Step 6: Cook for 28 minutes
Step 7: Let your cupcakes cool
Step 8: Frost with your green frosting
Step 9: Cut your edible Easter grass into 2 inch pieces and top off your frosted cupcakes
Step 10: Dab a little bit of frosting underneath your Peep. Then place the Peep on top of the edible Easter grass
