It’s officially highschool football season here in the South. The Friday night games are always sure to draw a big crowd. This year my niece, Becca, is cheering on the Varsity Squad and to kick off the new Panther season I hosted a tailgate party with my sister-in-law, at the first home game. I made some Pimento Cheeseburger Sliders for the occasion.

The folks at my favorite local restaurant, Hogie Joe’s, are big fans of the Georgia Bulldogs. They even have a special Bulldog Burger on the menu that I absolutely love. I get it almost everytime we eat there. The burger is topped with creamy pimento cheese, and is oh-so good.
I decided to make some Pimento Cheeseburger Sliders aka Panther Cheer Burgers for our tailgate party up at the school.
That’s Grandma Laura in the picture above, making sure we didn’t burn down the school.
Before Friday’s game, I headed to Walmart and picked up some Kingsford charcoal, ground beef, buns and all the fixins for my burgers. Sliders are an economical way to feed a crowd. I purchased (3) 2.25 pound packages of ground beef which yielded 36 small patties. Instead of buying ‘slider’ buns, I went with less expensive split dinner rolls which are essentially the same thing.
Now let’s talk about the pimento cheese. It’s very easy to make your own pimento cheese (recipe below) but if you don’t want to do that there are some very good pre-made options in the dairy or deli section of your supermarket.
My Mom has been making pimento cheese as long as I can remember. I grew up on the stuff and still love a pimento cheese sandwich for lunch. If you like cheese on your burger, trust me – you’re going to love these sliders.
Pimento Cheese Recipe
ingredients:
2 cups shredded extra-sharp Cheddar Cheese
8 ounces cream cheese
½ cup mayonnaise
¼ teaspoon garlic powder
¼ teaspoon ground cayenne pepper
¼ teaspoon onion powder
1 (4 ounce) jar diced pimento, drained
salt and pepper to taste
Directions: In a stand mixer, fitted with a paddle attachment, combine all ingredients until well blended. That’s it. Easy peasy!
To keep the tailgating costs down, we enlisted the help of some of the cheer moms who were happy to bring sodas, cupcakes, and chips. My sister-in-law made some pasta salad, and Grandma Debbie made some baked beans.
The cheerleaders had a good meal and a chance to chit chat before the start of the game. The pimento cheeseburger sliders were a big hit!
We had so much food that we were able to feed the police officers and paramedics, before the game too. I think the opposing team was pretty jealous of all our tailgating food and fun!
