How Do I Store Leftovers?

You can safely refrigerate leftover croquettes in an airtight container for up to 3 days. These croquettes are extremely freezer-friendly, too. First, I freeze my fried salmon croquettes for 5 minutes on a cookie sheet. Then, I carefully transfer them to freezer bags. You can freeze them for 3 months. To reheat them and preserve their crispy texture, first, thaw them overnight in the refrigerator, and then pop them in the oven at 375 degrees Fahrenheit for 8-9 minutes, flipping them halfway through for ultimate crispness.

I serve these salmon croquettes for really hungry families with this filling, deliciously sauced Creamed Asparagus. Why? Because adults and kids alike enjoy spooning some of the creamed asparagus right on top of these delicious croquettes. Ingredients
  

  • 1/2 cup all-purpose flour
  • 1/4 cup yellow cornmeal
  • 15 ounces canned salmon drained and flaked
  • 1 red bell pepper finely chopped
  • 1/2 cup sweet onion diced
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 cup mayonnaise
  • 1 large egg beaten
  • Vegetable oil for frying

Instructions
 

  • In a large mixing bowl, combine flour and cornmeal.
  • Add the flaked salmon, chopped bell pepper, diced onion, Worcestershire sauce, seasoned salt, black pepper, garlic powder, mayonnaise, and beaten egg to the bowl. Stir until the mixture is well combined.

  • Form the mixture into 6-8 patties, depending on your preferred size.
