My low carb journey has begun. I first thought eating a low carb diet would be impossible for a bread and pastry loving girl like myself, but so far so good. Preparing delicious recipes like this Slow Cooker Chicken Fajita Soup is certainly making it easier. I don’t feel like I am missing anything when I eat this flavorful soup.
While I will no doubt still enjoy an occasional piece of my favorite Texas Turtle Sheet Cake or a bite (or two or three) of Chocolate Mousse, I think I will be quite satisfied eating low carb recipes like this one. Many thanks to McCormick for sponsoring this post and providing samples of their new McCormick Skillet Sauces which inspired this recipe.
This Chicken Fajita Soup is so easy to make in the slow cooker, and tastes great the next day. If you like fajitas you will enjoy this soup. It has all the same great flavors, minus the tortillas. If you are not on a diet like myself, you can load this up with toppings like avocado, shredded cheese, black olives, sour cream, and tortilla strips. The possibilities are endless. But if you are on a diet, no worries, because it’s delicious all on it’s own.

Ah! Just the thing for the winter! I wish I had some of this waiting for me today as I came home in 20 degree weather with 20 mph winds! Thanks for the recipe, the only change I’ll make is to add more mushrooms (maybe double the amount), cause I love them! Pinned and planned and drooling!
