I was eager to try out my new doughnut pans and am quite pleased with my first batch of doughnuts. This spiced cake doughnut recipe is perfect for breakfast. It yields light, fluffy doughnuts that are full of spice and sweetness, while not being overly sweet. Don’t have a doughnut pan? No worries, this recipe would work just fine for muffins.
Spiced Cake Doughnuts:
2 c ups all-purpose flour
3/4 cup white sugar
2 tsp baking powder
1/4 tsp ground nutmeg
1/4 tsp ground cinnamon
1 tsp salt
3/4 cup milk
2 eggs, beaten
2 tsp vanila extract
1 tbsp shortening
Glaze:
1 cup confectioners sugar
2 tbsp hot water
Directions:
Preheat oven to 325 degrees. Lightly grease the doughnut pan. In a large bowl, mix flour, sugar, baking powder, nutmeg, cinnamon and salt. Stir in milk, eggs, vanilla and shortening. Beat together until well blended.
Fill each doughnut cup approximately 3/4 full. Bake 8 to 10 minutes in the preheated oven, until doughnuts spring back when touched. Allow to cool slightly before removing from pan.
To make glaze, blend confectioners sugar and hot water in a small bowl. Dip doughnuts in the glaze when serving. Recipe yields 12 spiced cake doughnuts.

in your opinion, could you make this batter the night before or would it just be best to make it the day of?
