I love sweet potatoes and everything about them. I think that is how I fell in love with sweet potato casserole with pecan topping. Sweet potato casserole is the perfect side dish no matter when it is. This sweet potato casserole with marshmallows recipe is really easy to make. If you are planning on bringing this dish somewhere for a potluck, it is really easy to transport. No matter which kind of sweet potatoes casserole you love, you can easily share it with everyone.

What’s the difference between yams and sweet potatoes?

Oftentimes, the words sweet potatoes and yams are used interchangeable and it is usually talking about the tubers that have red skin and orange flesh. However, they are different. The difference between yams and sweet potatoes is that yams are starchier while sweet potatoes have a sweeter flavor. Yams are typically darker in color than sweet potatoes. In an American grocery store, true yams are not likely to be found. True yams have brown or black skin and red, purple, or off-white colored flesh.

Can you make Sweet Potato Casserole with Marshmallows in advance?

You can make sweet potato casserole ahead of time, but I would recommend waiting to add the marshmallows until you are ready to bake it.

If you are wanting to make it in advance, I would recommend cooking the sweet potatoes and then adding them to a casserole dish with all of the other ingredients. You can then store it in the fridge. If you want to keep them for a few days, just be sure that they are covered and everything is sealed tightly.

If you store it in the refrigerator, you might need to add some more time to the cooking time.

How to Reheat Sweet Potato Casserole

If you have leftover Sweet Potato Casserole with Marshmallows, it is really easy to reheat.

You can either reheat it in the oven or in the microwave.

For the oven, I would recommend preheating it to 350 degrees and then baking it for about 15-20 minutes.

If you are going to take the sweet potato casserole out of the fridge and heat it up in the microwave, I would recommend putting it back into a dish that can go into the oven because once you put marshmallows on to it, microwaving will make them soggy.

Ingredients

  • 4 large sweet potatoes
  • 1/2 cup light brown sugar, packed
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 bag (10 ounce) mini marshmallows

Instructions:

Step 1: Bake the sweet potatoes: Place unpeeled sweet potatoes on a baking sheet and baking in a 400 degree F oven for about one hour. (Tip: Place a piece of aluminum foil on the baking sheet for easy cleanup!)

Step 2: Once the potatoes are cooked, slice in half and scoop out the flesh.

Step 3: In a mixing bowl, combine the cooked sweet potato, brown sugar, salt, vanilla, eggs, and melted butter. Mix until well blended.

Step 4: Transfer filling to a greased 2 quart baking dish.

Step 5: Bake in a 350 degree F oven for 30 minutes. Remove from the oven and sprinkle with mini marshmallows over the top

Step 6: Return to the oven for 10 minutes, or until the marshmallows are lightly browned.
