This Taco Tater Tots Casserole is simple to make, budget-friendly and a meal the whole family will enjoy. With all the flavors of a taco, this tater tot casserole goes great with a side salad for an easy meal.

As a kid, one of my favorite things to eat was a plate full of Tater Tots® potatoes slathered with cheese or ketchup, sometimes both. So, it’s no surprise that my family loves eating Tater Tots potatoes too.
Tater Tots potatoes are great as a side dish, but now that Fall is upon us all I want to do is open the windows, do lots of baking, and make casseroles for dinner. There is something so comforting about a casserole this time of the year. All summer long it was too hot to use the oven much, so I am relishing in this opportunity to bake up and roast all of my family’s favorite foods.

This time of the year is also a rather busy one with school in full swing, high school football games most Friday nights, and three major holidays before the end of the year. When I’m doing meal planning, I’m thinking of “weeknight easy’ recipes. This Taco Tater Tots Casserole is exactly that. It’s a kid friendly meal that is both economical and simple to make.
Taco Tater Tots Casserole
Ingredients:
1 pound ground round
1 small to medium onion, diced
1 envelope taco seasoning
1 1/2 cups salsa
1 (2 pound) bag Tater Tots
1 1/2 cups shredded Cheddar cheese
1 (2.25 ounce) can diced black olives
1 cup green onion, sliced
Directions:
Cook and brown ground beef and onion, until fully cooked and onion is tender. Drain off any excess fat. Add taco seasoning mix and stir in salsa.
Meanwhile, bake Tater Tots according to package directions. You could skip this step and place the frozen Tater Tots over the cooked beef. I prefer more crispy Tater Tots and think this simple extra step is worth the effort.
Place beef mixture into the bottom of a 9 x 13 casserole dish. Spread it out evenly with a spoon. Cover with an even layer of Tater Tots® potatoes. Top with cheese, black olives and green onion.
Bake at 350 degrees, uncovered for 15-20 minutes, or until cheese is melted and casserole is nicely browned on top. Serve with additional salsa and some sour cream.
I like to serve this Taco Tater Tots Casserole with a nice big salad. It’s one of those meals that is sure to please everyone in the family.
