Easter is just around the corner, and if you’re looking for a festive breakfast or dessert, these Homemade Easter Bunny Cinnamon Rolls are perfect! They’re made with homemade cinnamon rolls shaped into bunnies, and they’re so easy to make.

Rolls: – ¼ cup (57 g) butter (melted) – 1 package instant yeast – 3 cups (360 g) all-purpose flour – ¼ cup (50 g) granulated sugar – 1 large egg – ¼ cup (60 g) water – ¼ cup (60 g) whole milk – ½ tsp vanilla extract – ½ tsp salt Filling: – 6 tbsp (85 g) butter (softened) – 1 tbsp (10 g) ground cinnamon – ¼ cup (50) granulated sugar or dark brown sugar Icing: – 2 cup (240 g) powdered sugar – 6 tbsp (90 g) whole milk – ½ tsp vanilla extract – Gel food colors (pink, yellow, green, blue) – Sprinkles
Preheat the oven to 350F (180C). Take the water, milk, and butter and heat until the butter melts.
In a large mixing bowl, sift the flour and put the sugar, salt, and yeast. Pour the wet ingredients and vanilla extract to the dry ingredients and mix.
Add the egg and continue to mix. Take it to the floured table and knead the dough for 3 minutes. Place in a bowl and put on a stretch film and rest for 40 minutes to rise.
For filling, put the sugar, ground cinnamon and softened butter in bowl and mix. For the icing, sift the powdered sugar, add vanilla extract and milk, and mix.
Divide to 4 cups and color with gel food colorings until to your desired colors. After the dough raised take out and roll out to a rectangle shape (it quite to 15×9 inch)
Put the butter and sugar mix top of the dough and roll up the dough tightly to make a log.
Cut into 10 pieces and shape as a bunny. (Open and bend the dough and repeat one more time and it will get the ear shape.) (Be sure that ears are sticked together because it can be opened while baking.)
Place it to the baking tray and rest for 10 minutes to rise before baking. Bake for 20 minutes. (Take out after 10 minutes and shape it again if it is opened then continue to bake for other 10 minutes)
After it baked take out and cool down. Spread the icing and sprinkles top of the cinnamon rolls.
