Ready to try some delicious white cake mix cookies decorated with brightly colored rainbow sprinkles? Your kids are sure to love these – as well as any adults you serve them to!

I’m a little obsessed with using cake mixes in non-traditional ways. These Chocolate Peanut Butter Cake Mix Cookie Bars and Strawberry Chocolate Chip Cake Mix Cookies are two of my favorites.

Today I am going to share with you something as beautiful and bold as they are tasty and easy to make. Rainbow Sprinkle White Cake Mix Cookies! Taking a look at Pinterest, cookies made from cake mix are very hot right now. And I’m not surprised by that.

Just think about it, the warm, moist flakiness of a cake offered up in a small, delicious cookie. This is a recipe you can get your kids involved with in the kitchen. They will have fun adding the sprinkles to the mix and rolling the dough into balls for baking.

Serve these at a rainbow or unicorn themed birthday party or just anytime you want to brighten up dessert! You can pick between these and our Rainbow Swirl Cookies.

Ingredients:

  • 1 (18.25 oz.) vanilla/white cake mix
  • 2 large eggs
  • ⅓ cup vegetable or canola oil
  • 1 teaspoon vanilla extract
  • ¾ cup rainbow sprinkles, divided (jimmies preferred)

Instructions:

Step 1: Preheat oven to 350 degrees. Line a baking sheet with parchment paper or a non-stick baking mat.

Step 2: In a large bowl, mix together the cake mix, eggs, oil, and vanilla until smooth.

Step 3: Stir in ½ cup of the sprinkles.

Step 4: Chill the cookie dough for about 30 minutes.

Step 5: Roll the dough into 1-inch balls.

Step 6: Pour the remaining ¼ cup sprinkles onto a small plate. Gently press each ball into the sprinkles, then place balls (sprinkle side up) about 2-inches apart onto the baking sheet.

Step 7: Bake for 8-10 minutes, until the cookies are set and very lightly browned. (Be careful not to let the cookies get overly brown.)

Step 8: Allow cookies to cool for a few minutes, before gently transferring to a wire rack to finish cooling.
