Tis the season for baking Christmas cookies! I just know you’re going to love these White Chocolate Dipped Macadamia Nut Cookies. These oh-so chocolaty macadamia nut cookies, dipped in white chocolate, are the stuff sweet dreams are made of. Be sure to make a few extra to leave out for Santa.
Chewy chocolate macadamia cookies get a festive makeover with white chocolate and festive sprinkles. These decadent cookies rank right up there with some of my favorite Christmas cookies – peanut butter blossoms, peppermint chocolate chip cookies, and jam filled butter cookies. Oh, and I mustn’t forget these Chocolate Dunked Pistachio Shortbread Cookies and classic Italian Pignoli Nut Cookies. Can you tell that I REALLY like cookies?
White Chocolate Dipped Chocolate Macadamia Nut Cookies
Ingredients:
1⁄2 cup butter, softened
2⁄3 cup light brown sugar
1⁄4 cup sugar
1 egg
1 egg white
1 tsp vanilla
1⁄3 cup unsweetened cocoa powder
1 tsp baking soda
1⁄2 tsp salt
1 1⁄4 cup flour
1 2⁄3 cup white chocolate chips, divided
1⁄4 cup semi-sweet chocolate chips
1 cup chopped macadamia nuts
1⁄2 Tbsp vegetable oil
Instructions:
Preheat oven to 350 degrees. Line baking sheets with parchment paper.
In a mixer, cream together butter and sugars. Mix in egg, egg white and vanilla and mix until smooth.
In a medium bowl, combine cocoa powder, baking soda, salt and flour. Stir to combine.
Working in batches, mix dry ingredients into butter mixture. Stir until smooth. Fold in 2⁄3 cup white chocolate chips, 1⁄4 cup chocolate chips and 1 cup macadamia nuts.
Drop by 1 1⁄2 Tbsp balls onto prepared cookie sheets. Bake for 7 minutes. Cool for 2 minutes before transferring to wire cooling racks to cool completely.
In a small bowl, combine remaining 1 cup white chocolate chips and 1⁄2 Tbsp oil. Stir. Microwave for 30 seconds and stir until smooth. If needed, microwave in 10 second increments, stirring in between, until all the chips are melted and smooth. Dip cooled cookies into melted chocolate and place on parchment paper to set.
