Ingredients
  

  • 1 pound carrots peeled and sliced
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup
  • Salt and pepper to taste
  • 2 teaspoons parsley chopped

Instructions
 

  • Bring a pot of water to a boil. Add the carrots to the boiling water and cook for 4-5 minutes, depending on how soft or firm you'd like them to be.
  • Drain the carrots.
  • Drizzle the olive oil and maple syrup over the carrots, and sprinkle with salt and pepper. Toss to coat evenly, and then garnish with the chopped parsley.
