Ingredients
  

  • 12 cupcakes from your favorite recipe or boxed mix
  • 2 to 3 cups vanilla frosting
  • 6 miniature marshmallows
  • Pink sprinkling sugar
  • 12 rainbow swirl lollipops
  • You will also need a large open star tip

Instructions
 

  • Pipe frosting over cupcake in a circular direction working from the outside of the cupcake towards the center.
    Pressing a diagonally cut miniature marshmallow into pink sprinkling sugar for unicorn cupcakes.
  • Using a clean pair of scissors or a paring knife, cut each miniature marshmallow diagonally. Press the cut side into the pink sprinkling sugar and tap to remove excess. Place one marshmallow “ear” on each side of the cupcake.

  • Check the length of the lollipop stem against the cupcake and trim excess if needed. Just before serving, insert one lollipop into the center of each cupcake.
