Anyone who loves unicorns needs to stop what they are doing and make these Unicorn Cupcakes.

These oh-so adorable cupcakes are incredibly easy to make and the taste is sure to please. These yummy and colorful cupcakes are perfect for a party or something fun to make with your kids on a rainy afternoon.

My 11-year-old is obsessed with unicorns which is really fun, because I was quite the unicorn fanatic when I was her age. There’s a part of me that sill loves unicorns and these unicorn cupcakes are a fun treat that we can enjoy making together. There are tons of unicorn cakes and cupcakes to be found on Pinterest, but I wanted a unicorn cupcake that was simple enough for anyone to make without spending a lot of time. I think these unicorn treats are just that.

Easy Unicorn Cupcakes

If you have a unicorn lover in your house, you have to make these cupcakes. So simple to make, everyone will be impressed with just how adorable these cupcakes are.

How to Store Cupcakes

These unicorn cupcakes should be stored at room temperature and make sure they are covered well. You do not want to refrigerate these cupcakes unless you decide to use cream cheese frosting instead of a traditional buttercream. Cupcakes last longest when they are stored at room temperature covered well.

How to Get a Cupcake Swirl

To get the pretty frosting swirl on top of the cupcake you want to use a piping bag and a star tip. Once you have filled the piping bag with frosting, start on the outside edge of the cupcakes and squeeze. Move the tip slowly, from the outside inward and upward to create the swirl.

How Long Do Unicorn Cupcakes Last

When cupcakes are stored properly the cupcakes will last up to 5 or 6 days. Since these cupcakes are made at home, without the preservatives, they tend to get stale by day 5.

Ingredients

  • 12 cupcakes from your favorite recipe or boxed mix
  • 2 to 3 cups vanilla frosting
  • 6 miniature marshmallows
  • Pink sprinkling sugar
  • 12 rainbow swirl lollipops

You will also need:

  • Large open star tip (Wilton 1M Open Star Piping Tip)
  • Piping bag
Ingredients for Easy and Oh-So Cute Unicorn Cupcakes: cupcakes, miniature marshmallows, pink sprinkling sugar, rainbow swirl lollipops, and vanilla frosting.

Instructions:

Step 1: Pipe frosting over cupcake in a circular direction working from the outside of the cupcake towards the center.

Pressing a diagonally cut miniature marshmallow into pink sprinkling sugar for unicorn cupcakes.

Step 2: Using a clean pair of scissors or a paring knife, cut each miniature marshmallow diagonally. Press the cut side into the pink sprinkling sugar and tap to remove excess. Place one marshmallow “ear” on each side of the cupcake.

Step 3: Check the length of the lollipop stem against the cupcake and trim excess if needed. Just before serving, insert one lollipop into the center of each cupcake.
