1large head cauliflower or 2 small, cut into florets

1/4cupheavy cream
3/4cupsour cream
1/4cupbaconcooked and crumbled, divided
1/4cupgreen onionssliced, divided
1 1/2cupscheddar cheesedivided
Instructions
Heat the oven to 400°F.
In a large bowl, toss together the cauliflower, melted butter, smoked paprika, garlic, salt, and pepper. Spread onto a baking sheet and roast for 15 minutes.
In a large bowl (tip: use the same bowl used for the cauliflower to cut down on dishwashing), combine the heavy cream, sour cream, half the bacon, half the green onions, 1 cup of the cheddar, salt, and pepper; stir well until everything is evenly incorporated. Add the roasted cauliflower and toss together until the cauliflower is coated.
Pour the mixture into a casserole dish, then sprinkle the rest of the cheddar, bacon, and green onions on top. Bake until hot and bubbling, 20-30 minutes.
