Ingredients
  

  • 1 large head cauliflower or 2 small, cut into florets
  • 2 tablespoons butter melted
  • 1 teaspoon smoked paprika
  • 2 cloves garlic crushed
  • Salt and pepper
  • 1/4 cup heavy cream
  • 3/4 cup sour cream
  • 1/4 cup bacon cooked and crumbled, divided
  • 1/4 cup green onions sliced, divided
  • 1 1/2 cups cheddar cheese divided

Instructions
 

  • Heat the oven to 400°F.
  • In a large bowl, toss together the cauliflower, melted butter, smoked paprika, garlic, salt, and pepper. Spread onto a baking sheet and roast for 15 minutes.

  • In a large bowl (tip: use the same bowl used for the cauliflower to cut down on dishwashing), combine the heavy cream, sour cream, half the bacon, half the green onions, 1 cup of the cheddar, salt, and pepper; stir well until everything is evenly incorporated. Add the roasted cauliflower and toss together until the cauliflower is coated.

  • Pour the mixture into a casserole dish, then sprinkle the rest of the cheddar, bacon, and green onions on top. Bake until hot and bubbling, 20-30 minutes.
