Fiesta Lime Chicken

This recipe for Fiesta Lime Chicken is as flavorful as it is easy to make. It only calls for a handful of ingredients and there is a good chance you may already have them in your kitchen. The best part, it can be prepared in just 25 minutes.

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup ranch dressing
  • 1/4 cup Greek yogurt
  • 2 tablespoons lime juice
  • 1/4 cup fresh cilantro chopped
  • 1 clove garlic minced
  • 4 slices colby-jack cheese
  • Pico de Gallo for serving

Instructions
 

  • Heat grill pan to 400F.
  • Brush each chicken breast with olive oil and then sprinkle with salt and pepper.
  • Grill for about 10 minutes on each side or until chicken is no longer pink inside and is cooked through. Set aside.
  • While chicken is cooking, in a bowl combine the ranch dressing, yogurt, lime juice, cilantro and garlic. Stirring until well combined.
  • Spoon ranch mixture evenly over the top of each chicken breast. Then top each with a slice of cheese. Return the grill pan to the heat for a minute or two, until the cheese is melted.
  • Top with Pico de Gallo and serve with Mexican rice.
