- 1 box rotini pasta
- 1 container grape tomatoes quartered
- 1 cucumber diced
- 1 cup sliced black olives
- 1 cup romaine lettuce roughly chopped
- 1 cup crumbled feta cheese
Dressing:
- 1/3 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 1 teaspoon oregano
- 2 tablespoons chopped fresh parsley
Cook pasta according to package directions for al dente. Drain and set aside to cool.
In a large bowl, combine tomatoes, cucumber, olives, and lettuce. Add pasta and toss.
In a small bowl, whisk together dressing ingredients. Pour over pasta and toss to combine. Top with feta cheese. Serve and enjoy!
