Ingredients
  

  • 1 box rotini pasta
  • 1 container grape tomatoes quartered
  • 1 cucumber diced
  • 1 cup sliced black olives
  • 1 cup romaine lettuce roughly chopped
  • 1 cup crumbled feta cheese

Dressing:

  • 1/3 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon oregano
  • 2 tablespoons chopped fresh parsley

Instructions
 

  • Cook pasta according to package directions for al dente. Drain and set aside to cool.
  • In a large bowl, combine tomatoes, cucumber, olives, and lettuce. Add pasta and toss.
  • In a small bowl, whisk together dressing ingredients. Pour over pasta and toss to combine. Top with feta cheese. Serve and enjoy!
